I've done the clutch before,
and I think it'll be easier
to manipulate it
within the decoys that we have.

My job is the complete opposite
of what I do with cakes.
It's very serious.
I'm the Director of Education
for a civil rights organization in Canada.
By nights, I'm an absolute boss
about tricking people through cakes.
Are you guys excited to, uh, bake?
We are.

I think so. I'm doing a rich chocolate.

I decided to go with chocolate fudge cake,
raspberry coulis,
and hazelnut spread
Swiss meringue buttercream.
I'm sort of regretting it, 'cause I
realize how difficult a sneaker is.
-That sneaker is pretty basic.
-Yeah.
-[April] I know, but
-Don't share the secret.
-I'm not trying to be basic.
-There's no secret.
No, but I mean, like,
that's a believable sneaker.
-You don't need the bells and whistles
-Keep it simple.
to make it look real.

[Jonny] I'm coming in as a winner.
I got $10,000 in my pocket, which

I feel this is a hard challenge
because it has to look perfect,
or it looks really not like the item.

In the last challenge,
I made those tacos look imperfect.
The imperfections
made it look more realistic.
But with the bucket hat cake,
I gotta make sure it looks like
a real piece of fabric.
And that has to be perfect.
-Would you make these perfect?
-I feel you would make these perfect.
-You have to have a sneaker right.
-[Sam] Yeah, exactly.
The hat can't be perfect, though.
-Like, the bucket hat
-You have to have the wrinkles.
[upbeat music playing]

-[Jonny] I'm doing a churro cake.

It's gonna be churro, cinnamon.
It'll have Swiss meringue
buttercream, chocolate ganache,
a cookie crunch.

[mumbles] Oh, that's good.
[Andrew] My money's on Nina.

I'm from Carencro, Louisiana,
where we have good food, good crawfish,
and some of the most loving
and heartwarming people in the world.
I'm a natural artist.
And I started designing cakes
as a creative outlet.
After that, I opened up my own business.
And things just kind of blew up.
Espresso powder!
Ooh.

-[April] It's the battle of the chocolate.

[April and Nina laugh]
[Jonny groans]
[Nina laughs]
I'll be over there in a minute.
I'm making sure that my cake
tastes amazing.
I'm making a rich chocolate cake
with salted caramel and chocolate ganache,
coconut cream cheese,
toasted coconut, and almond flakes.
You just gotta fool the judges.
It's not about perfection,
it's about fooling the judges.

My strategy is to focus on the details
to bring life to the actual cake.

I have some things that might

-This is like psychological warfare.
-Exactly.
I wonder if I can get this texture.
Your shoes are dope.
[Andrew] And they spin.
-[Mikey] No!
-[Nina] Round and round they go.
Those are awesome.
I love shopping.
I'm a girl of fashion, can't you tell?
I wear the craziest of shoes.
I like to add things like cat ears
to my wardrobe.
So, replicating a clutch should
be right up my alley.
Bucket hats. [laughs]
I feel insane.
Which hat looks like a cake?
[April laughs]

Fabric is really hard to mimic.
The trouble with making cake
look like fabric is that it just doesn't.
I'm covering the cake
in this cool product, Flexique.
It turns wafer paper into fabric.
It's crazy.
[April] What ya got there?
I'm trying to make edible fabric.
[April] Interesting.
I've never used it before,
but I think it's worth the risk trying it
because I'm trying to make a fabric hat.
[April] I'm learning from you.
-Oh, I'm learning from me, I guess.
-[April laughs]
[April] To fool the judges,
I've gotta get hyper-focused
on making sure the contours
are right as I'm carving it.
[Nina] Is your carving
going okay with that?
Things are rolling.
When you're making a shoe cake,
everybody knows how it's supposed to look.
That's an important part
of this deception.
To try to recreate that,
it takes a lot more work.
You have to use a lot more precision.
Things have to look exactly right,
in the right proportions.
Otherwise, it's completely off.
I did not make this easy on myself,
that is for sure.
All right, bakers. Four hours left!
It seems like all the time in the world,
but it goes fast.
[April] I'm a hyper-perfectionist.
I like to spend a lot of time
obsessing about teeny tiny details.
Let's see if I can
salvage this thing. [laughs]
Adding some bumps and ridges
to make sure it looks like rubber.
-Hey, Jonny?
-[Jonny] Hm?
How's it going with your hat?
[sighs] Mostly well,
except the Flexique is slipping off.
[April] Oh.
I'm trying to attach this Flexique
to my cake, and it will not stick.
And no amount of edible glue
I'm putting on
is saving the situation here.
The hat's gonna look busted, broken.
It's not gonna be real.
I've never used it before,
so I don't know what I'm doing.
I'm a fool.
Bakers! Two hours left!
About your average movie length.
[Nina] The difficulty in
replicating a clutch is
you have to pay so much attention
to the details.
There are certain molds that can
replicate the different textures
that you can imprint into fondant
or modeling chocolate.
And it's the perfect texture
that I'm looking for.
Hey, Nina. How's it going?
It is going swell.
I just colored my fondant.
I think my strategy is to kind
of do like a matchy sort of thing.
-Right.
-Trick them a little bit.
I want to add a component
that may wow the judges.
I want to add an actual
thread to my clutch.
So, I take this winding tool.
It gets the fondant really thin.
And start to work on the stitching
of the purse.
Yes! That's perfect.
I think I just have to scrap the fabric
I was doing.
[April] Oh, man.
Is it a bad idea to just start over now?
This is not working.
It doesn't look right.
-[April] Man.
-[Jonny] Time to say goodbye.
I've wasted so much time
on something I totally scrapped.
So, I gotta work double time.
I'm switching to modeling chocolate.
Modeling chocolate will stay put.
I've used it tons of times before.
And it can have that look
of flowing fabric.
I'm pushing through the pain.
My hands are hurting
from kneading all day.
And they're still hurting.
The modeling chocolate is looking amazing.
In fact, it looks almost as good
as the Flexique.
All right, bakers! One hour left!
[April] Need to dull this down
on the inside.
I'm making the inside of the shoe
to look like leather.
If it's not looking tan enough,
I know it's gonna be a dead giveaway.
So I'm combining
some different shades together
until I get it just right.
And smooth it out on the inside.
Working on it.
Being somewhat of a clutch connoisseur
[laughs]
most clutches and bags
actually come with a strap.
That's what I'll do.
I need that oomph, I need something
to take me to that next level.
[Mikey] Thirty minutes!

But some of my decoys have grommets.

But if I screw them up,

I've got the perfect grommet shape.
I paint gold luster dust on
very delicately
to this gum paste grommet I've made.
And I let it dry.

by Jonny's cake.
But up close, I would say
I could easily tell that this is a cake.

I've never eaten a shoe,
but I'll go for it.
[April] What we have here is

a rich chocolate cake,
with coconut cream cheese

I love the way that Nina
put the strap in there.
That threw me.
Even this texture that almost felt like

For me, with Nina it was the hidden strap.
It was so realistic.

Even though half of it is cut off

all roads lead to fondant.

-Yes.
If this is cake, you win $5,000.

[Nina groans]
