cake bakers talk about all the time

-[laughing]

You guys use it every week,
so we don't need this.

[Nina] So, there's a shine kinda
coming off of the top white part.
That shine is normally seen on fondant.
-Not on ice chests.

[Mikey] Excellent.

-[Andrew] Whoo!

Bakers, you know the game.
Each of you are going to have to
choose a beach vacation item
you want to make into a cake.
So, Andrew, what's it going to be?
I'm gonna go with Number Four.

-Why did you pick the conch shell?
-[Andrew] I don't know.
I don't wanna do any of these cakes,
and that one I don't want to do the least.
All right. Nina, you're up next.
Three, the coconut.
-The tropical drink!
-[Nina] Yes.
Interesting.
All right, we have our first two.
Dessiree, what's your pick?
Uh, my pick will be Number Two.
Okay, the sand in the bucket,
-little shovel. Right.
-[Dessiree] Yeah.
Okay, bakers, it's time
to make your cakes.
Head to the kitchen and suit up.
[whooping]
-[April] All right!

[Mikey] You have eight hours
to complete your cakes.
And, Gallery, get comfortable.
[women chuckle]
[echoing] It's time to bake.

I get to sit back and watch now.
I know. It's It's, uh, karma happening.
Gotta give you a taste
of your own medicine.
I like it.

I'm Andrew Fuller.
I'm a cake sculptor and owner
of Sugar Freakshow in Des Moines, Iowa.
[Nina] How's it going, Andrew?
[Andrew] I'm measuring everything first,
so I get that outta the way.
I specialize in hyper-realistic cakes.
People come to me because they want a cake
that is either going to
gross out their guests,
or fool their guests.
When I deliver my cakes,
I have an '80s hearse
that's painted with green flames
down the side of it.
I have four hairless cats,
some Madagascar hissing cockroaches,
a pet leech.
[laughs]
I think the best way
to describe me would be
to say if you don't quite
fit into the cake community,
but you didn't have enough talent
to join the sideshow,
you come together
and you create Andrew Fuller.
[laughs]
[Justin] So what's
your cake flavor, Andrew?
Well, since I'm from Iowa,
we don't have a lot of beaches.
-[laughs]
-When I wanna go to the beach,
the first thing I do
is go grab an iced dirty chai.
-So I'm doing a dirty chai cake
-[Justin] Uh-huh.
and then a Saigon cinnamon buttercream.
Here's my biggest concern.
It's not just a shell. It's a conch shell.
So, it's gonna be quite the challenge
to pull off this natural thing
that we find in nature.
So I decided that I'm going to make a mold
but not of the whole entire shell,
because I really wanna show my skill
with actually sculpting.
So, I use a silicone mold mix.
The silicone takes
a good hour or two to mold,
so I gotta get this done right now.
Okay, we gonna set you aside.
I think you both are going to be very
-Tough competition?
-tough competition.
[Nina] Glad you noticed.
I like how I'm so cocky now
since I won the last challenge.
Like, yeah!
It feels so good to be up here
on my throne
[laughs] as the queen of the kitchen,
but now the stakes are bigger.
There's $15,000 on the line.
That's quite a big chunk of change.
So, I have to defend my crown.
[Sam] Nina?
-Yes?
-What flavor is your cake?
I'm not as complicated as Andrew,
so I went with something simple.
[Hemu] Good for you!
[Nina] I'm doing a cookies and cream cake
-[Sam] Okay.
-[Jonny] Brilliant.
with, um, an American buttercream
with sandwich cookies and ganache.
-[Sam] Ooh, yum!
-Wow.
I love ganache.
Good, I'm doing ganache next,
and I'm learning from you.
-[Nina] Ugh! I'm so happy I can help.
-[Andrew giggles] I thought you would be.
[upbeat music playing]
Dessiree, what's your flavors?
I'm making the rum coconut cake.
-[gallery] Ooh.
-[Steve] Oh, that's nice.
I'm gonna do brigadeiro
with passion fruit.
-[Andrew] Nice.
-Ooh, nice!
Your flavors sound good.
-Yes, it's Latino flavor, so
-[Nina] Oh!
So are you bringing a little bit
of your culture to the challenge?
-A bit of Venezuela to the cake.
-[Nina] I love it.
I'm from Venezuela.
And I'm the owner of Sugar Dreams,
located in Palm Bay, Florida.
I was a Zumba instructor,
that was my passion.
And I used to be
a really good Zumba instructor.
I can take the cake like
doing samba to them.
-Can you teach me samba?
-Yeah.
[Andrew] Okay. Maybe later when I'm chill.
One day, I was doing,
like, the merengue step,
I hear a click on my knee,
and that was the end of my career.
But because of the problem
that I have with my knee,
now I find out the gift
that I have with my hands,
and that's why I'm sitting here right now.
There you go.
I think the biggest issue
that Dessiree's gonna have,
it's not with the bucket and handle,
it's with the shovel.
If she replicates the size,
that's a really big cake.
My cake doesn't have a lot of details,
so I focus on three elements,
sand, the bucket and the shovel,
and the bottom is small,
and the top is bigger,
so this is gonna be hard.
[whirring]
[upbeat music playing]
Oh, bakers!
I brought some items
to help you guys deceive the judges.
I think that the best strategy here
is to find shells
that have a variance
of size, color and shape.
I wanna have some that are all similar
and then one that's, like, off.
-It's tough, huh, Dessiree?
-Yeah.
[Dessiree] I'm gonna go with
the same size that I have.
Okay, you have
about six hours left, bakers.
[upbeat music playing]
Even though it's very organic, it still
has to look exactly like a conch shell.
The best way to make
a realistic-looking conch shell
is to use the conch shell itself
as a mold.
-[Andrew] Nina?
-Uh-huh?
[Andrew] The mold Oh, it totally worked.
Oh, that looks good.
-It looks so good.
-[Nina] That looks good.
I'm not sure how this is gonna come out.
[Andrew] Are you gonna be doing
the umbrella too on your thing?
Yeah. I need to get on that right away,
'cause I'm going to take my decoy
and wrap some wafer paper on the umbrella,
paint the wafer paper on there
and see if I can replicate it.
So, wafer paper
basically tastes like paper. [laughs]
It's really just a design element.
Totally messed this up.
And once it dries, it takes on the shape
of the actual thing that it's attached to.
But I hope it works,
because that'll
totally impress the judges.
They look pretty similar.
Do they?
Yeah. Oh, I wanna do an umbrella.
Yeah. That's really dope.
[Nina] Yes! Hey, Dessiree,
what you working on?
-I'm making my mold for the cake.
-Mm-hmm.
-[Dessiree] So
-So, the bucket you're using for a mold?
The bucket is gonna be my mold,
and I'm gonna do like Cha-cha-cha!
And magic coming.
Magic? [laughs]
Nice.
The point of a realistic cake
is they look the same.
And if I carve the cake,
I don't think that will be the same.
It's messy, but I think it's working.
I take my melted chocolate
and just pour it on the bucket
and turn it around so all the chocolate
goes around the bucket.
As soon as I get the cake right
on the bucket,
then I grab a piping bag and pour
all the chocolate coating around
so it can firm
and get everything together.
Put it in the fridge and then pray.
[laughs]
[funky music playing]
One of the most important things
that I'm noticing with this conch shell
is I really have to spend
a good amount of time color matching it.
So one of my favorite techniques
is to use powdered pigments,
because I can take a little bit
from each one and blend them together
till I get exactly the shade that I want.
Now, it's time for me to really get into
those nooks and crannies
and just manually going in there
and just getting every little part
that I feel like the ocean would've hit
or that the sand
would've hit and carved away at.
I think I can really fool the judge
if I figure out how to get
those little hairs on the coconut.
-And there's a
-The stringy?
Yeah. So, there's this sugar technique
where I can get these strings of sugar
[Andrew] I don't want
that to collapse on you.
I wanna beat you because
I did a better realistic cake than you,
not because your realistic cake was bad.
[laughs]
All right, bakers. Three hours remain.
I may have bit off
a little more than I can chew
trying to make these coconut hairs.
But I came across this technique
where you use isomalt and a whisk
to create this type of hair-like texture.
And it's looking good.
It's like, whoo! Yes!
So, let's see. I win or I lose?
I have to take the cake out of the bucket.
I don't know if it's going to work.
[tense music playing]
Ta-da!
-[Andrew] Good job.
-Jesus, thank you! I love you!
[Andrew chuckles]
I did it. I made the bucket.
Just looks like a bucket.
I knew it was gonna work!

It's interesting. Some of them have that
shine to them, and some of them don't.
[Andrew] Some don't. I'm trying to
decide if I want to shine mine or not.
And you have something that'll do that?
-Yeah, yeah.
-Is there a shine spray?
There's an edible lacquer.
Edible lacquer is the new fondant.
-[laughing, chatting]
-That's how good she is.
[Steve] Mikey can't say "fondant."
Nobody's using it.
Wait, guys, it would be fun if we just
made up a phrase and all went with it
and got him using it.
-Flumbe or something.
-[Jonny] Flumbe!
-Tiltscape?
-[Justin] Till what?
-Tiltscape.

That's good.
Mikey's having a crash course
in cake baking,
so I actually think
he's probably learning a lot.
And when somebody is an eager learner,
what do you do?
Take advantage of them.
-You like to learn new terms, right?
-Well, today I learned "edible lacquer."
[Steve] Yeah?
-So, we'll teach you another one.
-And Okay.
With fondant you don't have to,
but with chocolate,
you have to worry about tiltscape.
[bell dinging]
-Tiltscape.
-Tiltscape?
-[Hemu] Everyone worries about tiltscape.
-Love it.
-[Hemu] Especially Andrew.
-What is tiltscape?
When you finally mount your piece
on a piece of cardboard for presentation,
if your tiltscape's off,
if there's not enough of an air gap,
then you have a horrible tiltscape.
Interesting.
It's not a word.
It doesn't exist. We made it up.
-And tiltscape is something you utilize?
-[Hemu] In every cake. Yes.
It's like negative space.
You're trying to create the illusion
of a hole or something.
-You've got to learn so many new words.
-There's so many new terms.
Oh my God. I'm gonna see cakes
and be like, "That's"
"That's bad tiltscape."
-[Hemu] Are you dreaming about fondant?
-[Jonny snorts]
-In the middle of the night, "Fondant!"
-"Tiltscape!"

edible lacquer on there.

to figure it out.
Sand and the shovel.
So for my sand, I'm gonna
take my coconut cake and vanilla cookies,
because it's really light
and then blend all that together,
and when they blend,
they're gonna be just like the sand.
Bakers, 15 minutes left.

So, this is a dirty chai cake
with a Saigon cinnamon buttercream
-and a spicy ganache on the exterior.

It's so good!
-Delicious.

[Chris] The detail is unbelievable.

[Nina] So, this is
a cookies and cream cake
with a light and fluffy buttercream
and chocolate ganache.
[Chris] Wow. That's really good.
This is very moist.

I've never been so excited
to eat dirt in my life!
-I love the way this tastes.
