to battle it out

we couldn't take this challenge on.

We're celebrating her fight against cancer
for five years.

crazy combinations come from?

I think it goes without saying,
but I can't help but ask,
why does Daryl deserve this?

The day we found out
what type of cancer she had,
I was a basket case.
And when I looked
[emotionally] When I looked up at her,
that's what she was doing.
Fighter.
Didn't quit. Didn't complain.
Didn't cry. [emotional chuckle]
I have to tell you something.
[voice cracking] My mom died from cancer.
And I just wish I could have done
a party like this for her.
So I'm gonna do my best.

Something that you could see her
in a museum kind of thing.
I'm thinking about something big.
Around 60 or 70 pounds of chocolate.

-I was thinking of three feet.

I'm going up against a 60-pound chocolate.

That moment

They kind of, like, bring back
that memory of them
melting down candies together.

She loves cosmetics, so the idea
is to make a big stand of makeup, right?
Eye shadows made of marshmallow,
different flavor.
Maybe two or three other components
that you will see on a makeup stand.

You know, makeup is not my thing,
so maybe you can

-Do you have any ideas?

Nail polish would be epic.
So we're gonna do nail polish.

So, I wanna make this giant bust, right?

Then what I wanna do
I wanna add a chocolate crown,
because she's a queen.
She is a warrior princess.
How much chocolate are we talking about?
I'm thinking
about 65 to 70 pounds of chocolate.
-Yeah, it's gonna be quite, quite heavy.
-I'm sorry, what?
Very big.
Let's talk. How much?
I'm just gonna start
putting chocolate up here.
-You tell me more
-This is all dark.
Gonzo, get in here. Let's go.
You got chocolate to temper.
Do I need to back up a truck
with more chocolate?
I hope she's not gonna do that
with my flour.

That's definitely gonna be enough.
But this is gonna take a lot of time,
because it's a huge piece of chocolate.
If I hand-carve it,
it's gonna take me a lot longer.
So I'm trying to figure if there's a way
to get a mold or something similar
with her face or something, like a bust,
so I can make it happen a lot quicker.
How long is it gonna take
the chocolate to set?
It's gonna take around six hours.
This is a commitment.
If the chocolate isn't set,
you don't really have time
to form another bust.
Exactly. We're gonna make it happen.

So right now I'm thinking fair food.

So I decided I'm gonna make pretzels
dipped in a banana chocolate
with taffy sprinkles,
lollipops, gummy bears
Three different flavors:
coconut, passion fruit, and orange.
Ooh, that's good.
And I'm making
three different sizes of everything.
I've never done so many flavors.
It's a lot. It is a lot.
Sweet on my tongue, you never stop ♪

Gonzo, I got you a present, bud.

I really need
to start filling this thing up.

First of all, that looks incredible.
Okay, so talk to me about
What's your big idea?
Her daughter having battling
and succeeded in fighting cancer
is the true epitome of someone
who deserves all the flowers.
So I was thinking of creating
a bouquet of cake pops.
-[Tosi] Not a little bouquet of flowers.
-No.
-It's a big bouquet of flowers.
-It's a big bouquet.
No, no, bigger.
Taller.
[Maya-Camille vocalizes, laughs]
Okay, I think you've got it in you.
-I got it.
-But you gotta move.

Then we gonna move on to the next one.
I'm going to make
a makeup stand for Daryl.
So I have about
20 different colors to make.
I started baking at 17 years old,
studying in a French pastry school.
I'm still in love with what I do.
Always try for perfection.
That's why I work
in a three-star Michelin restaurant,
that's why I work in a five-star hotel,
is because I wanna become the best.
I'm an illusionist of the desserts.
They may look like something,
and they taste like something else.
I'm all about playing mind games.
I like to confuse people.
A lot of flavor.
I have green apple,
lemon curd, blueberry, violet.
Violet, like the candy.
I'm doing like [exhales]
So much. So much.
So much flavor.
[Gonzo] I'm starting to fill this up,
and I have to make sure
that I go little by little
in order to not have
any air bubbles in here.
If I have air bubbles inside of my mold,
when I unmold this,
I'm gonna have to patch
a bunch of different parts of this piece.
And we don't want that, 'cause I'm running
against the clock right now.
When it comes to chocolate,
there's nothing I can't do,
but I've never done anything
like this before.
I've done giant chocolate pieces,
but not a bust of this size.
I can barely lift this thing.
You know, chocolate needs to set
for me to take it out of the mold.
If it doesn't set on time,
it could actually break,
or you could have cracks.
But it's all about pushing boundaries.
That's what I'm here for.
[Maya-Camille] I'm making some buttercream
to go inside each cake pop,
because this is going to help
meld the cake batter together.
I am making
four absolutely delicious flavors:
pineapple rum, mango coconut,
plátanos maduros with pretzels,
and then chocolate beer
with coconut de crema candy.
I'm incorporating Nina and Daryl's
Puerto Rican heritage through the flavors.
This is not your typical cake pop.
This is an infused cake pop.
-Oh!
-Whoa!
[Ashley] Oh my goodness!
My superpower is taste.
[air kisses]
I've got enhanced taste buds.
When I was one years old,
my mom discovered
that I was hearing-impaired.
And because I have a loss of hearing,
I have a heightened sense
of taste and smell.
[uplifting music plays]
Some bakers are all about the show.
I'm all about the flavors.
Okay, let me get these lollipops in.
I'm making three different lollipops,
and I'm making violet-flavored,
a rum vanilla bean,
and a watermelon apple.
That's a big sucker.
The hardest thing with lollipops
is not over-cooking your sugar.
You have to cook it to a hard-ball crack,
which is 300 degrees Fahrenheit.
The chance of burning your sugar
is, like, really high,
so if you have a thermometer
with a probe on it, it'll save your life.
-[pop music playing]
-Light 'em up, hey, hey, hey ♪
[Tosi] Six hours to go, Bake Squad.
Christophe, are you cooking something?
I need your help for a second.
Okay.
[Gonzo] It's pretty nerve-wracking,
'cause if this falls off, it tips over,
I'm screwed.
I only have one shot at this.
-You got it?
-Oh, wow. Yeah.
Hold it stable.
-Thank you.
-Thank you, Ashley.

[Gonzo cheers] Yeah!
[Maya-Camille] I am making
a plantain and pretzel cake pop.
Most cake pops are just cake
mixed in with a little bit of buttercream
and formed into a shape,
but I've made them more difficult
by adding the fillings.
Fillings is going to change
the temperament
and how the pop holds
with the Popsicle sticks.
I have to press it in really tightly
to make sure that it doesn't come apart.
What is going on over here?
I look up, and there's a whole
Like, three rainbows.
Yeah, I'm making actually
20 different color of lipstick.
Twenty, you said?
This is crazy.
The lipstick, what is this made out of?
It's gonna be
four kind of different mousses.
And nail polish, I'm sorry?
Nail polish, we do two kind of curd,
lemon and orange,
and three kind of coulis:
blueberry, the green apple, and guava.
Then this eye shadow marshmallow?
Yeah. I didn't even start yet.
-Two hundred and sixty?
-Yeah.
Have you lost your mind?
-Every day.
-[both chuckle]
[Gonzo] On top of my chocolate bust,
I wanna make a crown filled with bonbons.
I wanna have
many, many components for them to eat
while they're having their tea party.
Daryl's a very girly-girl.
She's into fashion and makeup.
So I wanna make sure
that it's all covered in pink,
and it really represents
Daryl's personality.
I'm gonna fill each one of the bonbons
by piping ganache.
Once I have that done,
I do the last layer
with more chocolate in order to seal it.
I hope my lollipop worked.
[up-tempo, energetic music playing]
-It's bigger than your head.
-It is, right?
Three hours to go, Bake Squad.
And so we shake up the day ♪
And we kick into play ♪
Until the night turns into day ♪
Push up the beat, keep it moving ♪
[Christophe] Right now I'm making
three kinds of marshmallow in one shot.
Time is ticking right now, so we gotta go.
[Maya-Camille] Oh my gosh.
It came off the stick.
I am trying to put the stick in here
without breaking the cake pop.
But this one with the plátanos maduros
and the pretzel,
it's more susceptible to coming apart.
I already lost one,
and I can't really afford to lose another.
[groaning]
I'm gonna pop these back into the freezer
and make them more firm
before I dip any more.
[jaunty pop music playing]
[pop singer grunts]
[Ashley] Now if that doesn't look
like a pretzel pro
I'm making a soft pretzel
dipped in a banana white chocolate,
coated with banana taffy sprinkles.
I'm just gonna add
a little bit of banana emulsion
to give that nostalgic banana flavor.
I really did my best here
to put a fun, modern twist
on a nostalgic favorite that they shared.
No, you're never gonna be alone ♪
All you gotta do is hear the song ♪
To know that we're together, together ♪

[Christophe] You see the consistency
of the of the nail polish? It's perfect.
I pulled the bust out of the fridge
knowing that I didn't properly give it
enough time for my chocolate to set.
We're running against the clock.

[Christophe] You okay, man?
-I'm good.
-It's set.
-Let's see if she's good.

The worst thing
that could happen to this bust is
When I'm unmolding it,
is to have cracks inside or air bubbles.
Utilizing power tools
in order to get this out.
Power tools for power man. Love it.
If I have an air bubble,
for example, right in her eye,
she's gonna be missing a part of her eye.
I have one shot at this.
[tense music swells]

-[Maya-Camille] Oh, wow.

'cause the crown
actually doesn't fit perfectly,
so I'm gonna have to carve part of
the head out in order to put in the crown.

We have different bonbons.
