the founder of Milk Bar.
I built a baking empire
on sweet, delicious cookie dough,
and now I've built a squad
to make people's dessert dreams come true.

to battle it out

this is a huge celebration
for a very little guest.

Julie, Audrey, tell us about the event.
Um, we want a huge cake
for my little sister's birthday party.

And why is this
such a special occasion, Julie?
A baby after a miscarriage
is called a rainbow baby.
And for us,
Hayley is a double rainbow baby.

She was a a huge surprise,
and she's been
an incredible blessing to our life,
so we just wanna celebrate her.

than I could possibly imagine.

We picked a rainbow theme
because she's our rainbow baby.

[Julie] We got an inflatable baby pool
and filled it with balls
so she could have a play area.

-My daughter loved playing in ball pits.

for what you're looking for in a cake.
Well, she loves to explore,
so anything that she can
get her hands into,
she's gonna just have so much fun with.

We had these little yogurt melt things
and they were tropical flavors.
She loves those.

[Julie] Yeah, she doesn't really like
sour things, as you can see.
So sour things are a no-no.

We've been giving her peanut butter puffs.
She likes sugary things. She's tasting
all these things for the first time.

My daughter's dessert
for her first birthday
was a chocolate-chip cookie
and brownie cake,
and she just went to town on it.
It was a cake that was created
just for her to play with.
-[Ashley's daughter coos]

Is this your little one?
This is my little Chloe bear
on her first birthday.

and she went crazy with it.
So when I saw Hayley in the ball pit,
immediately I was like,
"We're bringing that to life."

I have these half-sphere molds
that I can color,
pour some chocolate into,
and I was thinking inside of here
maybe this is what she smashes,
and it has her favorite things inside.
What kind of stuff are you talking about?
I'm thinking a mango mousse
could be delicious.
A cereal-milk whipped cream.
Oh, I know a little something
about cereal milk.
I thought you would like that.
-I need something from you though.
-Okay.
[Ashley] I need a slide.

It's going to be a cupcake rainbow.
-Ooh!
-Yeah.
-I want to do five kinds of cupcakes.
-Oh, of course.
[Maya-Camille] A rainbow of flavors.
[Christophe] And there's
gonna be a pot of gold here.
Okay. What constitutes the pot of gold?
I wanna do a 100% cake. Sculpted cake.
Oh, Christophe's doing a cake now.
This is going to be the first time
in my entire life
that I'm going to do a sculpted cake.
Ashley! He's coming for your job, man.
-Sculpted cakes? Bring it on.
-[Maya-Camille] Yeah.
I'm trying to make
a giant unicorn for her,
but I'm thinking massive.
You know, kids love unicorns,
and so considering that this event
is for a rainbow baby,
I'm thinking about making
a colorful, giant unicorn.
I wanna go somewhere around
three and a half feet tall.
It's gonna be bigger than her.
-Exactly.
-What's your medium?
So I'm gonna go with chocolate,
all chocolate.
I think I wanted more than just chocolate.
As a one-year-old,
you get to smash something.
Like, where does the smash cake
either literally or imaginatively
come into play?
[Gonzo] I am from Argentina,
so for me, this is the first time
I'm hearing about a smash cake.
What the heck is a smash cake?
So you're supposed to make it look pretty,
then the baby comes
and destroys it with her hands.
It sounds pretty crazy to me,
but I gotta figure it out.
They clearly wanted something
like a smash cake,
but what if I did a smash pie?
Yeah, you're the pie queen, right?
So I was thinking
what if I stacked key lime custard
into various colors upon each other?
I decided to do key lime
because it is one of
my most popular pies ever.
But I've never made
a deep-dish key lime pie before.
Maybe I'll do five-and-a-half inches high.
That's the highest key lime pie
I've ever made.
We're celebrating Hayley's
one-year birthday,
and I believe I was actually
one year old
when my mother discovered
that I had a hearing impairment.
So the first 24 months of the baby's life
is the most important.
So one thing I do know about babies
is that all of their senses
are developing,
so they need a lot of sensory stimulation.
So I am thinking of
an interactive dessert they can play with.
So I'm making baby blocks
out of the key lime pies.
[funky rock-pop music plays]
Bake away.
[Ashley] I have to get
my chocolate melted.
That's going. Let me get my marshmallows.
The first thing we're gonna do
is fill up this monster.
I'm about to make my vanilla batter
for the pot of gold
and the cupcake right now.
[Maya-Camille] I am getting into
key lime custard.
[Gonzo] I'm making a four-foot unicorn
all made out of chocolate.
And if this is not perfectly distributed
chocolate all around the mold,
it could crack or it could fall.
And here we go.
I have to flip it several times
just to make sure that I don't have
more weight on one side than the other.
[Gonzo grunts]
How heavy is that, Gonzo?
-Heavy.
-Heavy?
-It looks like it. It's like [grunts]
-Quite heavy.
-Let me know if you need my strength.
-Yeah.
The biggest challenge
with what I'm trying to make today
is, I don't know,
the fact that it's a life-size ball pit?
Nice and gooey and delicious.
This is an extremely ambitious idea.
It's all about structure,
so I decide that I'm gonna use
a rice cereal treat
as, like, the wall of my pool.
Hayley loves peanut butter,
so I'm gonna do the rice cereal treats
out of a crunchy peanut butter cereal.
This in here, or this in there?
I'm gonna need, I'm estimating,
40 sheet trays of cereal treats.
My daughter Chloe loved these.
So definitely time is my enemy right now.
[Tosi] Six hours to go, Bake Squad.
[Christophe] I'm doing
24 cupcakes of each,
so it's going to be
roughly over a hundred.
[Maya-Camille]
I am starting to put the food coloring
into each of my custards.
So I've started with the red,
and then next I'm going to do orange.
Yellow, green, blue, and purple.
So for this smashable cake,
it's going to be a mixture
of vanilla wafers
and a chocolate ganache.
I want a very smooth texture
for Hayley to just break into.
[Tosi] Gonzo.
-Hello.
-What is this?
This is going to be the smash cake
that you were talking about.
So, what I'm gonna do,
I'm gonna glaze it
with this pink chocolate that I have.
[Tosi] Her eyes will be drawn to these
two hooves at the bottom to smash.
It will feel different than the rest.
-Exactly.
-I see. That's very smart.
[bass-heavy funk music playing]
[Christophe] Rise and shine.
Like the cupcakes.
I'm baking my pot of gold
Vanilla cake.
and all the cupcakes as well.
Let's move on into the compote.
While the cakes are baking,
I'm making all my fillings.
Raspberry compote and blueberry compote.
This is the first time
I'm hearing about the term "rainbow baby."
It really touched me a lot,
so my concept today is representing
the rainbow throughout the five cupcakes,
so five fillings and five toppings.
Flambé on the way, flambé on the way.
Whoo!
Wow!
I have to carefully spread out
the key lime mixture
because I don't want to disturb
the graham cracker crust underneath it.
In order to make
the deep-dish key lime pie,
I can't just simply layer
each color on top of each other,
or else one layer
will bleed into the next.
I actually have to bake
each layer individually,
so that the key lime pie
develops a film on top
that will allow me to gingerly place
the next layer on top of it.
It is a game of "watch the pie."
My chocolate's melted,
so I'm gonna get started on these balls.
This is gonna be, like,
a crazy, tedious process.
To fill this pool
This is a four-foot-by-four-foot pool.
These balls are gonna be
roughly two and a quarter inches.
So there's some math there that you can
plug in and figure out the volume,
and bam, I need 400 balls.
Thickness Or should I say "thinness"
of the shell here is super important.
When it comes to these chocolate balls,
I wanna make sure they're not too thick
because Hayley
is supposed to smash them open.
All right.
I'm heating this up in order to have
this turntable warm enough
to melt the sides
of my chocolate dome
so I can turn them into balls,
which are going to be
the eyeballs of the unicorn.
That's a lot of eggs over there.
Hey, Gonzo,
are you preparing for Easter or what?
Uh, almost.
What is this?
Milk chocolate ganache.
-Can I try? With a spoon?
-Let me feed you.
-How is it?
-It's amazing.
Like everything you do.
You're so sweet.
And once again, my teammate
made something amazing.
I think today everyone wants to pull out
the best of what they can do.
All right.
So I need to push.
I need to push until the last minute.
[Ashley] Okay.
[Tosi] Three hours to go, Bake Squad.
I have two more layers
to add after this one,
and this is already getting really heavy.
So here we are, moment of truth.
I'm actually quite nervous
[tense music]
'cause I'm about to unmold
these giant eggs that I have,
and it could always crack.
[tense music swells]
-[tense music fades away]
-[Gonzo sighs]
All right, that's what I wanted.
Big old shiny egg.
[Ashley] All right, now I'm getting
all my fillings prepped for these balls.
I'm gonna have
my cereal-milk whipped cream,
I'm gonna do a mango mousse,
and a white chocolate mousse also.
Just pouring the heavy cream
over this cereal,
and just letting it sit to really develop
and get all those delicious flavors,
and then I'll strain it and whip it up.
After I get this folded in,
I can pipe this into the balls later.
All right, cereal milk,
white chocolate mousse,
and the mango mousse. Okay.
[Maya-Camille]
Baby Hayley loves tropical fruit,
so to make the pie
a little bit more personalized
for baby Hayley's birthday,
I am going to be adding fruit to it.
I'm cutting fruit that I am going to use
to spell out Hayley's name
on top of the blocks of key lime pie.
[Gonzo] So this is going to be the head.
[Ashley] Whoa!
Gonzo, that's coming together so fast.
It is.
Is this one of your famous egg sculptures?
-Indeed.
-Eggs-actly?
Eggs-actly. You got jokes.
-I got yolks. Get that?
-That's a second.
-I'll be here all day.
-It's gonna be eggs-traordinary.

I've never done that before,
and I want to have it perfect.

I'm just molding them,
shaping them
around the contour of this padding.
I never made a sculpted cake.

I have a cake artist in my team
who is amazing.

the first person that I'm gonna ask
if she can give me any advice.

to the red on the smash cake.
She's gonna go straight for that.
But if you pick her up,
the eyes, for example
These are also, like, smashable.
Gonzo, how easy are those hooves,
those feet to smash?

So I was really listening
when you talk about
the miscarriage and the baby rainbow.
I was really touched by it,
and I wanted to represent the whole story.
And, so, in the middle, we have the baby,
and on the outside,
we have the mommy and the family.
Oh, I love that.
From right to left, we have raspberry,
then we have the orange flavor,
then we have the lemon,
and we have chocolate cupcake
with mint topping.
For this one, it'll be
blueberry compote in the center
with vanilla Chantilly as well.

and a whole pineapple, diced.

Well, I find iced frosting
usually really overpowering,
and this is not too sweet.
This is perfect.
The cake was really, like, soft.
It's a good cupcake.
I gotta say, I had the blueberry lemon,
and it was so bright and so fresh.
You have this really interesting way
of taking your finest of your techniques
and grounding them and rooting them
in really simple moments.
I'm always in awe of that.
And this cupcake is no different.

a giant unicorn for her,

You know, kids love unicorns,
and so considering that this event
is for a rainbow baby,
I'm thinking about making
a colorful, giant unicorn.
I wanna go somewhere around
three and a half feet tall.
It's gonna be bigger than her.

-What's your medium?
So I'm gonna go with chocolate,
all chocolate.
I think I wanted more than just chocolate.
As a one-year-old,
you get to smash something.
Like, where does the smash cake
either literally or imaginatively
come into play?
[Gonzo] I am from Argentina,
so for me, this is the first time
I'm hearing about a smash cake.
What the heck is a smash cake?
So you're supposed to make it look pretty,
then the baby comes
and destroys it with her hands.
It sounds pretty crazy to me,
but I gotta figure it out.
They clearly wanted something
like a smash cake,
but what if I did a smash pie?
Yeah, you're the pie queen, right?
So I was thinking
what if I stacked key lime custard
into various colors upon each other?
I decided to do key lime
because it is one of
my most popular pies ever.
But I've never made
a deep-dish key lime pie before.
Maybe I'll do five-and-a-half inches high.
That's the highest key lime pie
I've ever made.
We're celebrating Hayley's
one-year birthday,
and I believe I was actually
one year old
when my mother discovered
that I had a hearing impairment.
So the first 24 months of the baby's life
is the most important.
So one thing I do know about babies
is that all of their senses
are developing,
so they need a lot of sensory stimulation.
So I am thinking of
an interactive dessert they can play with.
So I'm making baby blocks
out of the key lime pies.

[Ashley] I have to get
my chocolate melted.
That's going. Let me get my marshmallows.
The first thing we're gonna do
is fill up this monster.
I'm about to make my vanilla batter
for the pot of gold
and the cupcake right now.

key lime custard.
[Gonzo] I'm making a four-foot unicorn
all made out of chocolate.
And if this is not perfectly distributed
chocolate all around the mold,
it could crack or it could fall.
And here we go.
I have to flip it several times
just to make sure that I don't have
more weight on one side than the other.

The biggest challenge
with what I'm trying to make today
is, I don't know,
the fact that it's a life-size ball pit?

This is an extremely ambitious idea.
It's all about structure,
so I decide that I'm gonna use
a rice cereal treat
as, like, the wall of my pool.
Hayley loves peanut butter,
so I'm gonna do the rice cereal treats
out of a crunchy peanut butter cereal.
This in here, or this in there?
I'm gonna need, I'm estimating,
40 sheet trays of cereal treats.
My daughter Chloe loved these.
So definitely time is my enemy right now.
[Tosi] Six hours to go, Bake Squad.
[Christophe] I'm doing
24 cupcakes of each,
so it's going to be
roughly over a hundred.
[Maya-Camille]
I am starting to put the food coloring
into each of my custards.
So I've started with the red,
and then next I'm going to do orange.
Yellow, green, blue, and purple.
So for this smashable cake,
it's going to be a mixture
of vanilla wafers
and a chocolate ganache.
I want a very smooth texture
for Hayley to just break into.
[Tosi] Gonzo.

-What is this?
This is going to be the smash cake
that you were talking about.
So, what I'm gonna do,
I'm gonna glaze it
with this pink chocolate that I have.
[Tosi] Her eyes will be drawn to these
two hooves at the bottom to smash.
It will feel different than the rest.

-I see. That's very smart.

Let's move on into the compote.
While the cakes are baking,
I'm making all my fillings.
Raspberry compote and blueberry compote.
This is the first time
I'm hearing about the term "rainbow baby."
It really touched me a lot,
so my concept today is representing
the rainbow throughout the five cupcakes,
so five fillings and five toppings.
Flambé on the way, flambé on the way.
Whoo!

I have to carefully spread out
the key lime mixture
because I don't want to disturb
the graham cracker crust underneath it.
In order to make
the deep-dish key lime pie,
I can't just simply layer
each color on top of each other,
or else one layer
will bleed into the next.
I actually have to bake
each layer individually,
so that the key lime pie
develops a film on top
that will allow me to gingerly place
the next layer on top of it.
It is a game of "watch the pie."
My chocolate's melted,
so I'm gonna get started on these balls.
This is gonna be, like,
a crazy, tedious process.
To fill this pool
This is a four-foot-by-four-foot pool.
These balls are gonna be
roughly two and a quarter inches.
So there's some math there that you can
plug in and figure out the volume,
and bam, I need 400 balls.
Thickness Or should I say "thinness"
of the shell here is super important.
When it comes to these chocolate balls,
I wanna make sure they're not too thick
because Hayley
is supposed to smash them open.
All right.
I'm heating this up in order to have
this turntable warm enough
to melt the sides
of my chocolate dome
so I can turn them into balls,
which are going to be
the eyeballs of the unicorn.
That's a lot of eggs over there.

Milk chocolate ganache.

I'm actually quite nervous

Just pouring the heavy cream
over this cereal,
and just letting it sit to really develop
and get all those delicious flavors,
and then I'll strain it and whip it up.
After I get this folded in,
I can pipe this into the balls later.

Baby Hayley loves tropical fruit,
so to make the pie
a little bit more personalized
for baby Hayley's birthday,
I am going to be adding fruit to it.
I'm cutting fruit that I am going to use
to spell out Hayley's name
on top of the blocks of key lime pie.
[Gonzo] So this is going to be the head.
[Ashley] Whoa!

then we have the orange flavor,
then we have the lemon,
and we have chocolate cupcake
with mint topping.
For this one, it'll be
blueberry compote in the center
with vanilla Chantilly as well.
Oh my goodness.
Inside the pot of gold,
we have a yogurt mousse
and a whole pineapple, diced.

Well, I find iced frosting
usually really overpowering,
and this is not too sweet.

The cake was really, like, soft.

I gotta say, I had the blueberry lemon,
and it was so bright and so fresh.
You have this really interesting way
of taking your finest of your techniques
and grounding them and rooting them
in really simple moments.
I'm always in awe of that.
And this cupcake is no different.
