The only thing that will be worrisome
is if Daniel and Juan
are on the same team,
because they both
are really strong in, um, carving,
and I would like to break that dynamic up,
from a strategic point of view.
If it's not a human,
I'm pretty good at sculpting.
-And I'm not putting a human on anything.
-[chuckles]

Unless the challenge is a human.

So, today's theme is Prehistoric.
This is all about sculpting.
Oui.
Hundred percent chocolate,
hundred percent sculpted.
-Yikes.

[Amaury] I know it's a very difficult type
of exercise.
What's difficult
to capture sometimes in sculpting,
it's the… the reaction,
the face, the emotion it's conveying.
You can tell this is snack time.
The fish doesn't like it too much.
You know, it's trying to scream
and run for his life.
Uh, pieces you add,
not only texture-wise, color-wise,
bring some life to your piece.
-[Daniel] Is the body hollow?
-[Amaury] Hollow.
[Cedrick] There's a skeleton in there?
[chuckles] Arms and legs
has a dark chocolate skeleton.
All the rest is just Robot Coupe chocolate
on the bones.
You polish the whole thing,
and you have this beautiful baby.
Wow.
I'm very good at linear lines,
but I don't have a lot of experience
sculpting, so, yeah, I thought,
"Oh, that's… This is gonna be a challenge.
I'm gonna have to think through this."
[Amaury] Let me conduct a quick demo
on what I call "the bath."
It is a secret I've never shown
in any of my videos or in any class.
-It will change your sculpting way.
-We're all ready. [chuckles]
I'm going to use hot water,
very hot water,
a brand-new sponge,
and apply a lot of pressure.
You know, you are being told
chocolate and water doesn't go together,
and it's true, for the most part.
But then, when used wisely,
you can get incredible results.
This type of result is impossible to get
by scraping and scraping and scraping.
-That's a secret, okay? Don't tell anyone.
-[students laughing]
-Whoopsie.
-We're gonna keep it between us.
-[students chuckling]
-I mean, look at this.
-You see the difference of texture?
-[Cedrick] Oh yes.
In ten seconds,
we can get something very smooth.
Also, with the water applied
to the milk chocolate,
the milk powder
that milk chocolate contains will dry,
creating a very thin membrane
onto the chocolate,
and will be a… a very nicer shine overall.
I bet it's been hard watching us do it
the wrong way all this time. [laughs]
I have to say,…
I have to say, I wanted to tell you.
But no, like, the chameleon,
now if you knew about the hot water,
can you imagine
how it would've turned out? Yeah.
He suggested doing a different technique
that I haven't done before.
Such a simple thing,
but it's like, wow. I was blown away.
So, just to do a little recap,
there have been two students
with overall top scores,
that are now eligible to compete
for best student overall in class.
Juan and Mellisa.
Knowing that this is all-or-nothing,
that definitely puts a big pressure.
Fifty-thousand dollars,
I can start following my dreams,
open my own business.
I wanna win.
So for the next chocolate showpiece,
we're gonna build two teams of four.
Juan, knowing
that you are the overall top score,
you're gonna be the first one to pick.
Who would you like to team up with you?
-Daniel.
-[Amaury] You'd like Daniel.

I really like, uh,
the dynamic that Daniel and I have,
and Daniel is a really good sculptor.

um, because I really felt like,
from a sculpture, uh, perspective,
in the remaining people,
he was gonna be the strongest person,
and I really knew
that he couldn't end up on Juan's team.

I did think about, "Oh, I should take
Tyricia just to sabotage Juan,"
because I knew
he really wanted her. [chuckles]
Just to mess with his head.
[suspenseful music playing]
Amanda.
[Amaury] Amanda.
And then I thought, "No, that's just…"
I mean, she would just be so miserable
not to be on his team,
so I wasn't gonna do that to her.
Juan, who would you like to pick?
I wanna have my girl Tyricia with me.
[both chuckling]
Something I told her right away was,
"If I'm gonna win, I want you by my side."
Round three. Juan, you pick first.
Uh, and it's Cedrick and Stephanie.
-Oh God. It's so difficult.
-You cannot pick both.

Stephanie will be joining your team.
-We didn't work yet together.

So just to remind you the rules,
the theme is Prehistoric,
you're gonna have 16 hours
to make a four-feet-tall showpiece.
I want the dominance
of this piece to be sculpting.

This is the last exercise.

It's gonna be Juan versus Mellisa.

[Mellisa] I do believe
that in order to win,
you have to 100% believe in yourself,
and I believe in myself.
I really do think that I…
I have what it takes to win this.

[Mellisa] We're gonna have a cave dwelling
up into a nest of little dinosaur eggs.
The little dinosaur guy
will be coming up out of egg shells.
[Thiago] I like a T. rex.
And you want three of them?
One with a little butt out, one kinda up,
and one with a mouth open would be cool.
-You need these sculpted guys to pop.
-Yep.
-We are part of this team.
-[Juan] Yeah.
-We are going to give it 1001%.
-[Juan] And that's what I want. Exactly.
I don't want this piece to be me,
I want this piece to be us.
I'm gonna work hard to come in first,
and I'm gonna get this.
[Juan] We have the rock here.
That is gonna be kinda, like, balance.
Put the bird in the middle,
and then we hide the whole bird
with the flowers and the leaves.
[Tyricia] Quit calling it a bird.
-[Juan] The dinosaur bird. The…

[Thiago] It would be cool
if they were on both sides.
-[Mellisa] The dinosaur head?
-[Thiago] Yeah.
Remember, you shaved a certain amount
when you're digging fossils.
You don't have to shave all of it.
As long as you see
it's kind of starting to be chiseled away.
Yeah. That's a good idea.

How did you separate the workload
between all your team?
[Mellisa] What I wanted to do
was organize it in a way
that everybody has an opportunity
to shine and to 100% contribute.
I think my strength lies
in being a pastry chef
who understands the wisdom
in being a great leader.
I really try to think about how long
it will take each thing to make,
and I write every 15-minute timeline.
So, everybody's got their tasks,
they knew what they were gonna be doing,
and I think it's a huge difference.
[pop music playing]

-How did you split all the workload?

I wanna make sure they're doing stuff
they actually have never done.
And the reason why is because
I want all of us to push ourselves.
[Tyricia] Juan is so humble,
and he's so… He has such a big heart.
Instead of him wanting
to just win it for himself,
he wanted to win it
for everybody on his team,
and I'm like,
"Forget about everybody else!"
"It's you and Mellisa,
and you need to win this."
[whimsical music playing]
[Cedrick chuckles]
[Tyricia sighs]

We wanted some leaves, and the best way
is to use an actual real plant.
[Amaury] Have you ever
done that before, Tyricia?
I've seen it done. I just never did it.
How's it going, Tyricia?
-[Tyricia] Doing a second coat on all ten.
-[Juan] Perfect.
[Tyricia] Am I taking too long?
-[Juan] Um, just a little bit. [chuckles]
-[chuckles] I figured.
I know so much is riding on this
that I wanna do it right,
so I'm… I'm actually moving too slow,
which is not good.

Two different pieces,
two different approaches.
Juan's approach to the way
he manages his team
is actually challenging them to do things
that they've never done before.
So you're gonna make a tube, see,
and then with your board, you're gonna go…
-The thinner they are…

[Juan] Because it shows more finesse.
[Amaury] It's risky.
As a teacher, I do love that,
yet, Mellisa's experience
as a business owner
is coming handy in this situation.
-We only need two to go on the outside.
-On the exterior, okay.
Strong leadership usually,
uh, gives you the best results
when you are on the time constraints,
so we'll see.

Daniel, before you start the head,
let's build the structure first.

I'm here to win. I'm here to do everything
that I can to take that crown,
and I want it, and I wanna fight for it.
So I wanted to make sure
that my showpiece is really risky.

It's extremely important
that it's bigger and crazier than before.

I'll keep adding details to them now.
I think we might be the underdog,
because we've seen
what Juan and Daniel can do together
when they worked on that chameleon.
And it was pretty beautiful,
and it was just them two.

[Thiago] I was excited for sculpting,
because I've sculpted things in the past,
not with chocolate,
and no one's really seen that.
I'm gonna take this to the next level.

So it's like a chicken

She is so inspired by what she does.
She pushes you
to be better than you already are.

And that is what sets her apart
and what makes her a winner in my book.

to get to where she is.
I like that she took herself
out of her comfort zone
and really tried to… to sculpt something.
I wanna help her win.

with a little green.

At the end of day, it's gonna end up
between me and Mellisa, and that's it.
And with the time that we have,

we're just jamming everything.
We still have to start assembling things.

Chefs, during this last challenge,
you all outdone yourselves in a major way,
and I wanted to congratulate you.
-You can be really proud of yourselves.

[Amaury] This was a great class.
I could see personal
and professional growth and improvement.
I hope you feel that way as well.
And at the end,
we had our two top students
going head-to-head
on the chocolate showpiece exercise.
Juan and Mellisa, please step forward.

[Amaury] Juan,
what were you trying to achieve?
[Juan] Me, when I think of prehistoric,
I think of, uh, color,
I think big flowers, big leaves,
and I also think of, like, the cavemen,
how they were also so scared,
always being in the caves.
And then, for me,
putting the dinosaur on top
is a representation of sometimes
it's better just to get out of that cave
and explore and evolve.
And that's why we have
this type of dinosaur,
because it's an evolving dinosaur,
from a dinosaur to a bird.
That's why the wings are so small,
and he actually cannot fly.
I couldn't have done it
without the three of them.
It was a team-effort piece.
I have a good emotion when I look at it.
What I love the most is this balance.
You start with a base being very thin.
With that much height and elegance,
you are proving
that you understand strength of chocolate.
It's a real chocolatier approach
to what a showpiece should be.
At first, when I saw those disks,
I'm like,
"Oh no, no. That's not what he wanted."
You turned a design I have to say I hated
into something I actually like.
The color combinations are very nice.
The little sugar droplets, great.
You start to put one, and two, and three,
and then I have dew drops,
dew drops, dew drops.
[laughing]
Also, when you're on the flat leaf,
this makes a lot of sense.
-Right now, it's raining, right? Almost.
-[Juan] Mm-hmm.
Because, otherwise,
you cannot have, like, a perfect…
-If I drop it, then twist it, so it looks…
-[Amaury] Maybe.
Or using it only on parts
that are horizontal.
Good job on the sculpting.
You took massive risk by cutting the head.
-Yeah.
-[Daniel laughs]
[Amaury] But I was all for it,
because I agreed with you.
At first I thought that some of the leaves
would be hiding too much the neck area,
and then it created some kind
of very green environment.
From a perspective of someone
who wants to look at a prehistoric piece,
I am in that wild prehistorical jungle.
So you hit the mark on that.
-The Colombian jungle.
-The Colombian jungle. Perfect.
[students chuckle]
[Amaury] However, cleanliness.
I see broken leaves.
I see broken feathers.
I don't have to look too deep
to see that things were rushed
at the last minute.
Ramen noodles?
[laughs]
-[Amaury] What's going on?
-It's eating.
-[Amaury] Eating what? The base?
-[Juan] Yes.
[Amaury] All right.
I did not see it at first.
And he knows how to use chopsticks, right?
[Juan] Yes. [laughs]
-He's a pretty advanced, uh, dinosaur.
-[Juan laughing] He put it…
I am being harsh, okay?
But this is unbelievable,
to be really honest.
You really listen, and I can tell that,
even though you came here
with strong knowledge on chocolate,
you grew from this experience,
so for me, it's a win.
A lot. [chuckles]

can you tell the whole class
what you're presenting today?
[Mellisa] So much of the prehistoric story
is actually death, right? And fossils.
So, I really wanted
to work that element in as well,
and it just kind of came alive
with the idea of doing the little babies
with the eggs on top of a fossil,
and this is…
[drum roll]
…the piece. [chuckles]
You… you really delivered
something very solid.
Each and every one of the element,
they are crafted to perfection.
Not to take anything away from you,
but I have to say, little plus Thiago.
-[Stephanie chuckles]
-[Amaury] The baby T. rex, it's fantastic.
-You really… you really have it.
-[students chuckling]
A sign of a good leader
is trust your team,
and for her to trust me to do these guys,
you know, for her big finale,
it's… it shows
what kind of a leader she is,
so I really appreciate that.
I was very fortunate
to have an amazing team. Yeah.
I like the color.
It's less bright,
but the dinos bring so much of that light.
Love the little mushroom.
Love the placement.
I would have loved for you
to show me heat gun and shine.
You make those eggs shiny,
and it's a big win.
Because, right now, it's…
aside from the mushroom,
it's all the same texture.
I really like the little…
the… the multiple shadow on the hand.
I can tell that time, you know, went by.
The leaves, not a big fan,
because everything you did
was so realistic-looking and so detailed
that doing a very modern approach
does not coincide
with the beauty of the whole piece.
Yeah. I agree.
The base, I have to say,
I've never seen this before.
I think it's a clever way of maybe
being less confident about sculpting,
yet still sculpting, and it's great.
But, in my opinion, the biggest flaw,
it's how massive
this beautiful yet massive base is,
compared to the rest of the piece.
[Mellisa] Yeah.
I believe that if you would've been able
to do this guy narrow,
it would have been a hit.
I agree. 100%.
However, the thing
that strikes me with this piece,
it's how impeccable
everything is glued on.
-[inspirational music playing]
-[Amaury] There is no fingerprints.
I cannot see any gluing point,
which is incredible. It's extremely rare.
You came here with a little bit less
chocolate knowledge,
coming from a restaurant business.
-You don't get to do this a lot.
-No. No.
[Amaury] You acquired knowledge.
You used the knowledge
of your team as well very wisely.
And you are delivering something
that is very new
to the world of chocolate.
It's a very new approach,
and I really appreciate it.
