Jamaica, meet the one-and-only Bake Squad.
Hello, Bake Squad.
So, Jamaica, tell us about your non-profit
and the event.
I started Black Everywhere
ten years ago to build community,
and it has grown to over 8,000 members
all over the country.
- Oh, wow.
- Wow.
We volunteer,
we do voter registration drives,
fitness walks, we kayak,
we hike, you name it.
And it is our ten-year anniversary gala,
and we are entirely volunteer-run,
and we are going all out
celebrating one volunteer in particular,
and that's Mignon.
Look at that smile.
[Jamaica] Mignon has been a volunteer
for several years with Black Everywhere,
but recently,
she's really given it her all.
For 52 straight weeks
she went on fitness walks,
leading the Black community
in health and wellness.
She also volunteers at the LGBTQ center
and has just completed
her master's degree in social work.
- Wow.
- That's amazing.
Tell us a bit more about the party itself.
Is there a theme?
It is an '80s formal theme.
- [Maya-Camille] Oh, yeah!

- So we are going to go over the top.

All of our '80s favorites.
Why are we choosing the '80s?
So Mignon loves the '80s,
and what's not awesome?
More vibrant colors.
Everything is bigger and out loud.
So let's talk about Mignon's likes
in the way of dessert.
[Jamaica] So Mignon loves rich,
thick, decadent dessert.
So think red velvet cake,
think German chocolate cake.
Thick, creamy, rich.
Where do we have permission to go
from an '80s-theme standpoint?

some of my all-time favorite things.

I want you to dig deep into this cart
for points of inspiration.

I was born in '87. There's so much
about the '80s I appreciate to this day.

I was very young still during the '80s,
but one thing I do remember
was the cassette tapes
I would listen to with my older sisters.

So I'm going to stack
the biggest sugar cubes.

backdrop of balloons and tinsels,
and in front of it is a pair of pants,
but the pants are cake,
and you can walk behind 'em
and it looks like you're wearing them.
I like it, but
I feel like you need more than one outfit.
- What about
- [gasps]

- 100%. I'm here for it.
It doesn't get more '80s than this.
Two cakes are better than one.
Are they? [laughs]
[Christina] I just doubled your workload,
but it's gonna be worth it.
Once you go big on the wardrobe,
you gotta go big on the flavor.

You know, I don't have
too much memories about the '80s.
- [Maya-Camille] Really?
- [Christophe] I was little.
I have so many memories from the '80s.
The music, the music, the music.
When it comes to '80s,
I think about music,
I think about
what kind of dances they did.
I've been dancing since I was super young.
In the '80s, my mom put me
in my very first ballet class.
This is where I got my knack for rhythm.
I always stay on beat. [laughs]
Hip-hop was not just about music.
It was about culture, about fashion.
So I'm going to celebrate
Black culture and fashion in the '80s.
Nice.
One of my favorite rappers
used to wear these.
- Okay.
- [Maya-Camille] This is a kufi.
[Christophe] A kufi.
It was part of the fashion of the '80s
to celebrate our connection to Africa.
- I see.
- These are door-knocker earrings.
- Bamboo earrings.
- [Christophe] You know what you're doing?
I know I'm gonna do something
with bamboo earrings and kufi hats.
That's all I know for now.
I'm excited to see
what you're going to do.
- Cake pants.

A little bit of sugar to cook today.
[Gonzo] Ash, do you have
packaged cookies at your station?
[Ashley] Take whatever you need.
This chocolate boom box,
it's quite an ambitious project,
because I have to recreate
every single element
that you see in an actual boom box.
There's a handle,
there's the speakers, knobs.
But for this, I don't have any molds.
You don't need this, do you?
- No.
- I'm gonna use this, okay?
So I have to be creative
and find different objects
and create molds
in order to make my boom box realistic.
One man's trash is another man's treasure.
- Gonzo, do you mind if I use your stove?
- All yours.
I have 350 pounds of sugar to cook today.
- Ashley, can I use your stove, please?
- [Ashley] Yeah.
So I need to use every stove I can
to cook my sugar. All the stations.
- All right, Christophe.
- Good morning.
You got a lot going on
at this station already.
- Yes, I do.
- [Christina] What are you making?
[Christophe] Today, I'm making
three different cake cubes
inspired by '80s candies.
Coke-infused gummies,
Banana Runts, and Rainbow Nerds.
Then I'm making
a giant five-foot-tall cube
made of eight individual sugar cubes.
A giant cube?
There's Rubik's Cubes in the '80s.
It's that little game of the '80s,
matching all the cubes up
in line by color.
- That's correct.
- But you're making a giant one of sugar.
I've never done anything like this before.
The biggest sugar sculpture I ever made.
I need to make 48 panels of sugar.
Then I'm gonna have to glue one at a time.
I've never heard
of anything like this before.
So this is the thing.
The dessert will be hidden in the inside.
So the goal is to create little windows
in front of each cube
and we crack open in the center
and grab our dessert.
Lord. First of all, I love this idea,
but it is a very big vision.
- Sugar is very temperamental.
- It is.
Every one of these 48 panels
has to be absolutely perfect
in size and shape and structure,
because if one of the levels
of those sugar panels
is a little too off or a little crooked,
it's gonna shatter.
Right. But you know what?
I'm not alone today.

[high-pitched] My name is Sandy.
Oh, Lord. Sandy is your pet rock?
- [high-pitched] How are you doing today?

All right, get that cake mixing up.
Today I wanna make an edible photo booth,
themed the '80s prom.
I'm gonna make two cakes.
One that looks like a prom dress,
and one that looks like the '80s pants.
Gonna bake a lot of chocolate cake so
I can cut out the circles for the pants.
For the pants,
I'm gonna do a German chocolate cake,
because that is Mignon's favorite.
And for the dress, I'm gonna make
a colorful, tie-dye vanilla cake,
with turquoise buttercream
and a Pop Rock bark.
Cakes are in.
Today, I'm completely inspired by
the flavors and the fashion of the '80s.
Okay, this is gonna be good.
- Maya-Camille. What are you making?
- [Maya-Camille] Hey, Chef.
So one of the things that I love
about the '80s is the culture of hip-hop,
and a part of that is the fashion.
So I am inspired
to create five accessories.
I'm going to make a kufi hat
made out of vanilla cake
with peach cobbler filling.
Bamboo earrings made out of chocolate.
African medallion necklaces
made out of sugar cookie.
Chocolate name rings
with a caramel pecan filling.
Sweet potato pie
that resembles a fanny pack.
I love that you're tapping
into every pastry spirit in this kitchen.
Chocolate, cake, pie, cookie.
And you'll have a lot of details
that you have to be exacting about.
- Because you're also doing an illusion.
- Okay.
I'm on display to bring
these brilliant accessories to life.
- I love the vision. Good luck.

I am using bamboo earrings to make a mold,
and once the mold is completed,
I will fill the mold with chocolate.
I'm gonna let that sit
and let it come together.
I'm gonna make a white chocolate bark.
Just gonna blend Pop Rocks
into white chocolate.
Then I'll crush this up into small pieces
and put it in the middle of the cake
for this dress.
[Christophe] Let's make the cherry jam
for the mini cubes.
[Maya-Camille] Peach cobbler.
Mm, smells so good.
[Gonzo] I have at least
100 pounds of chocolate going into this.
In order to make
this massive chocolate boom box,
I'm going to pour two giant panels
and then three other panels
that go on the sides.
On top of that,
I need to cast hundreds and hundreds
of different pieces
that attach to the actual boom box.
So many elements going into this.
[Maya-Camille] Pour my cake batter
for my kufi hat.
My desserts are going to have
Southern flavors,
because most Southern desserts
are also a part of Black culture.
Pop that into the oven.
The kufi cake is a vanilla cake
with peach cobbler filling,
covered in a kente cloth design.
Gotta put some more spices
into my peach cobbler.
- [Christophe] Maya-Camille?
- Yes?
[Christophe sings superhero theme]
It's Super Christophe.
[Christophe continues singing]
While my sugar is cooking,
I can start my miniature cubes.
Chocolate sponge and vanilla sponge,
going to be for the mini cubes.
I am planning to make 100 mini cubes
inspired by flavors coming from the '80s.
The first one will be Rainbow Nerds
with chocolate mousse,
cherry jam, and chocolate cake.
What do you think, Sandy, of the jam?
[high-pitched] Mmm,
oh my God, that's delicious.
[normal pitch] For the gummy-Coke mini
cube, I'm going to have caramel mousse,
a gummy-Coke panna cotta,
little bit of Coke, and vanilla cake.

The Banana Runts flavor
will have mascarpone banana mousse,
some passion and mango curd,
and I finish up with the vanilla cake.
Let's add a little bit of passion.

I almost forgot.
This German chocolate filling
is super delicious.
Beautiful.
I'm making the sweet potato pie
with some light brown sugar
with butter, cinnamon, nutmeg.
Put some fresh nutmeg in here.
I'm going to bake my sweet potato pies
until the top end
develops a nice caramelized color.
[Gonzo] I have little speakers right here.
Hey, Sandy, I brought us some music.
Are you ready for that?

for my kufi hat,
and I have buttercream around it
that serves as the border.

Rainbow Nerds candy for the mini cubes.
[Ashley] Let's start
getting this leg put together.
Ready to deliver ♪

The goal with these cakes is to make them
look as realistic as possible.
Oops.
The German chocolate cake is so moist,
but sculpting with cake,
you really want to work
with a denser, tighter crumb.
Getting that buttercream on the soft cake,
that's really challenging.
It just wants to tear and rip.
And the cake today is really moist
and has a looser crumb,
so it's kind of falling apart everywhere.
But I'm taking a risk here,
'cause it's Mignon's favorite.
Shake, shake your money, baby ♪
One leg down, one to go.
Can't get enough, no ♪
Beautiful sweet potato pies.
Perfect for the fanny pack.
Fanny pack is classic '80s fashion,
and sweet potato pie
is a beloved pie in the Black community.
So I'm going to make a sweet potato pie
with a separate crust
in the shape of a fanny pack.
In order to hold up
the shape of the crust,
I am making a brick of sorts
using aluminum foil
in a rectangular shape.
Cutting out all the fine details
of my fanny pack.
Once the fanny pack crust has baked,
then I will lift that up
and place it over my sweet potato pie,
so it's almost like a box.
Stop now
'Cause I can't get enough, no ♪
I have my Pop Rocks,
my turquoise buttercream, tie-dye cake.
Let's get this dress built.
[Christophe] My mini cubes are ready.
Unmold them, and now I am dipping them
into a white chocolate glaze
so I'm going to be able
to spray them the right color.
[Maya-Camille] I am pressing out the
cookie for my African medallion necklaces.
[Gonzo] The chocolate cassette.
Today, I'm not just creating a boom box.
I also want to create
something fun and interactive
for Mignon to eat at her party.
So for this,
I'm creating cassette chocolate bars
with different
'80s classic dessert fillings.
There's strawberry shortcake,
black forest cake,
and also a pineapple upside-down cake.
They take one cassette out
and they see an actual chocolate bar,
then they can break open and eat.
How fun!
[upbeat music plays]
Pop Rock bark, nice texture and crunch,
and fizz whenever they bite into it.
[Maya-Camille] I am going to bake
all my medallion cookies.
We got four hours to go.
How's everybody doing?
[sighs] It's gonna be tight.
- Working on some cookies.
- I'm doing good. Thank you.
[high-pitched] I'm always doing good
when I hang out with Christophe.
Why are you doing this voice?
Oh, that's your pet? Oh.
[high-pitched] My name is Sandy.
I love surfing with Christophe.

Now, why does Sandy
have such a high-pitched voice?
Why so many questions?

Forty-eight sugar panels to pour.
I need to make sure
to pour my sugar pretty hot
so there is minimum bubbles,
because if I have a large bubble,
that creates fragility
and the entire piece can collapse.
[Ashley] If I'm gonna make
a lot of edible fabric for this dress,
I just brush some of this wafer paper
with this gelatin and glycerin product.
I'm gonna put these edible icing sheets
right on top,
and it creates this nice,
edible, flexible, fabric-like product.
I glue these panels together with a bit
of that gelatin, then I just roll it.
I'm gonna pay homage to the '80s,
make this shimmery,
shiny, and very ruffly.
Perfect.
I'll work on the design for the cake.
In order to design
the kente cloth pattern for the kufi cake,
I am going to pipe buttercream
on top of acetate that is laid
over a picture I took of the kufi hat.
So it's like filling out a coloring book,
so to speak.
Then I'm going to put the entire acetate
on top and around my cake,
and the buttercream
will stick to the sides of the cake.
Perfect.
We are halfway through, Bake Squad.
Three hours and 30 minutes remain.
[Gonzo] Yes, this is perfect. It worked.
I am starting to unmold
every single texture,
knob, and button that I created.
This I'm excited about,
because I've never done it before.
Once I have my actual original box,
I need to make sure
everything is placed perfectly.
Making sure that everything fits.
'Cause if one of my elements
doesn't fit or falls down,
it's not gonna look realistic.
Oh, yeah, who's your chocolate daddy?
[Ashley] See what that looks like.
As I'm putting these sheets of edible
fabric on, it's all about how it lays.
It can't just be
this straight sheet of edible fabric.
It needs movement in it.
I easily could've spent
a day on them, each.
[exhales] This one is stressing me out.
[Maya-Camille] I need to make
the rings for Mignon.
Since we are honoring Mignon
as Volunteer of the Year,
I wanted to create
something special just for her,
and what's more special than a name ring?
Nice.
It's going to emulate the gold name rings
that we would rock in the '80s.
- Beautiful. It's nice and shiny.
- All right, Bake Squad, two hours remain.
We have only two hours left
in the kitchen,
and it's time for me to assemble the cube.
I have to be
really, really, really precise
in how I am gluing
every single panel together.
[groans] And it's hot.
Like glasswork.
Sugar, it's an element that can just crack
even faster than glass.
Every vibration can make
the sugar collapse.
Pressure is high.
Christophe, how are you looking?
- I'm ready to assemble my second box.
- What about this one? We move it?
- I would love to put it in the stand.

- It's gonna be hard.

I'm going to have
one cube filled with mini cubes.

I am placing holes into my cookies
and that is going to emulate
where the leather strips
are placed for the necklace.

First of all, the cake is so moist.
It's just how I like my cake.
And then all that coconut nutty goodness
in the middle.

and think it's gonna be really dense,
but it ends up just being rich
in, like, the perfect
creamy, fruity, balanced way. Oh.
This dessert truly celebrates Mignon
and the things that she loves
while also transporting us
back to the '80s.

I started Black Everywhere
ten years ago to build community,
and it has grown to over 8,000 members

we hike, you name it.
And it is our ten-year anniversary gala,
and we are entirely volunteer-run,
and we are going all out
celebrating one volunteer in particular,
and that's Mignon.

for several years with Black Everywhere,
but recently,
she's really given it her all.
For 52 straight weeks
she went on fitness walks,
leading the Black community
in health and wellness.
She also volunteers at the LGBTQ center
and has just completed
her master's degree in social work.

to celebrate our connection to Africa.

it's quite an ambitious project,
because I have to recreate
every single element
that you see in an actual boom box.
There's a handle,
there's the speakers, knobs.
But for this, I don't have any molds.

So I have to be creative
and find different objects
and create molds
in order to make my boom box realistic.
One man's trash is another man's treasure.

made of eight individual sugar cubes.

There's Rubik's Cubes in the '80s.
It's that little game of the '80s,
matching all the cubes up
in line by color.
- That's correct.
- But you're making a giant one of sugar.
I've never done anything like this before.
The biggest sugar sculpture I ever made.
I need to make 48 panels of sugar.
Then I'm gonna have to glue one at a time.
I've never heard
of anything like this before.
So this is the thing.
The dessert will be hidden in the inside.
So the goal is to create little windows
in front of each cube
and we crack open in the center
and grab our dessert.
Lord. First of all, I love this idea,
but it is a very big vision.
- Sugar is very temperamental.

Every one of these 48 panels
has to be absolutely perfect
in size and shape and structure,
because if one of the levels
of those sugar panels
is a little too off or a little crooked,
it's gonna shatter.

I'm gonna make two cakes.
One that looks like a prom dress,
and one that looks like the '80s pants.
Gonna bake a lot of chocolate cake so
I can cut out the circles for the pants.
For the pants,
I'm gonna do a German chocolate cake,
because that is Mignon's favorite.
And for the dress, I'm gonna make
a colorful, tie-dye vanilla cake,
with turquoise buttercream
and a Pop Rock bark.

Today, I'm completely inspired by
the flavors and the fashion of the '80s.
Okay, this is gonna be good.

So one of the things that I love
about the '80s is the culture of hip-hop,
and a part of that is the fashion.
So I am inspired
to create five accessories.
I'm going to make a kufi hat
made out of vanilla cake
with peach cobbler filling.
Bamboo earrings made out of chocolate.
African medallion necklaces
made out of sugar cookie.
Chocolate name rings
with a caramel pecan filling.
Sweet potato pie
that resembles a fanny pack.
I love that you're tapping
into every pastry spirit in this kitchen.
Chocolate, cake, pie, cookie.
And you'll have a lot of details
that you have to be exacting about.
- Because you're also doing an illusion.

I'm on display to bring
these brilliant accessories to life.

I am using bamboo earrings to make a mold,
and once the mold is completed,
I will fill the mold with chocolate.

Then I'll crush this up into small pieces
and put it in the middle of the cake
for this dress.
[Christophe] Let's make the cherry jam
for the mini cubes.

100 pounds of chocolate going into this.
In order to make
this massive chocolate boom box,
I'm going to pour two giant panels
and then three other panels
that go on the sides.
On top of that,
I need to cast hundreds and hundreds
of different pieces
that attach to the actual boom box.
So many elements going into this.
[Maya-Camille] Pour my cake batter
for my kufi hat.
My desserts are going to have
Southern flavors,
because most Southern desserts
are also a part of Black culture.
Pop that into the oven.
The kufi cake is a vanilla cake
with peach cobbler filling,
covered in a kente cloth design.
Gotta put some more spices
into my peach cobbler.

While my sugar is cooking,
I can start my miniature cubes.

inspired by flavors coming from the '80s.
The first one will be Rainbow Nerds

cherry jam, and chocolate cake.

The goal with these cakes is to make them
look as realistic as possible.
Oops.
The German chocolate cake is so moist,
but sculpting with cake,
you really want to work
with a denser, tighter crumb.
Getting that buttercream on the soft cake,
that's really challenging.
It just wants to tear and rip.
And the cake today is really moist
and has a looser crumb,
so it's kind of falling apart everywhere.
But I'm taking a risk here,
'cause it's Mignon's favorite.
Shake, shake your money, baby ♪
One leg down, one to go.

Beautiful sweet potato pies.
Perfect for the fanny pack.
Fanny pack is classic '80s fashion,
and sweet potato pie
is a beloved pie in the Black community.
So I'm going to make a sweet potato pie
with a separate crust
in the shape of a fanny pack.
In order to hold up
the shape of the crust,
I am making a brick of sorts
using aluminum foil
in a rectangular shape.
Cutting out all the fine details
of my fanny pack.
Once the fanny pack crust has baked,
then I will lift that up
and place it over my sweet potato pie,
so it's almost like a box.
Stop now
'Cause I can't get enough, no ♪
I have my Pop Rocks,
my turquoise buttercream, tie-dye cake.
Let's get this dress built.
[Christophe] My mini cubes are ready.
Unmold them, and now I am dipping them
into a white chocolate glaze
so I'm going to be able
to spray them the right color.
[Maya-Camille] I am pressing out the
cookie for my African medallion necklaces.
[Gonzo] The chocolate cassette.
Today, I'm not just creating a boom box.
I also want to create
something fun and interactive
for Mignon to eat at her party.
So for this,
I'm creating cassette chocolate bars
with different
'80s classic dessert fillings.
There's strawberry shortcake,
black forest cake,
and also a pineapple upside-down cake.
They take one cassette out
and they see an actual chocolate bar,
then they can break open and eat.
How fun!

all my medallion cookies.

Forty-eight sugar panels to pour.
I need to make sure
to pour my sugar pretty hot
so there is minimum bubbles,
because if I have a large bubble,
that creates fragility
and the entire piece can collapse.
[Ashley] If I'm gonna make
a lot of edible fabric for this dress,
I just brush some of this wafer paper
with this gelatin and glycerin product.
I'm gonna put these edible icing sheets
right on top,
and it creates this nice,
edible, flexible, fabric-like product.
I glue these panels together with a bit
of that gelatin, then I just roll it.
I'm gonna pay homage to the '80s,
make this shimmery,
shiny, and very ruffly.
Perfect.
I'll work on the design for the cake.
In order to design
the kente cloth pattern for the kufi cake,
I am going to pipe buttercream
on top of acetate that is laid
over a picture I took of the kufi hat.
So it's like filling out a coloring book,
so to speak.
Then I'm going to put the entire acetate
on top and around my cake,
and the buttercream
will stick to the sides of the cake.
Perfect.
We are halfway through, Bake Squad.
Three hours and 30 minutes remain.
[Gonzo] Yes, this is perfect. It worked.
I am starting to unmold
every single texture,
knob, and button that I created.
This I'm excited about,
because I've never done it before.
Once I have my actual original box,
I need to make sure
everything is placed perfectly.
Making sure that everything fits.
'Cause if one of my elements
doesn't fit or falls down,
it's not gonna look realistic.
Oh, yeah, who's your chocolate daddy?
[Ashley] See what that looks like.
As I'm putting these sheets of edible
fabric on, it's all about how it lays.
It can't just be
this straight sheet of edible fabric.
It needs movement in it.
I easily could've spent
a day on them, each.
[exhales] This one is stressing me out.
[Maya-Camille] I need to make
the rings for Mignon.
Since we are honoring Mignon

where the leather strips
are placed for the necklace.

with Coke panna cotta,
caramel mousse, and vanilla cake.
It's rich, but it's still
really delicate and light.
I never knew you could make gummy cola
into a delicious, deep mousse.
[Christophe] The green cube
is inspired by Rainbow Nerds.
Chocolate mousse,
cherry jam, and chocolate cake.
[Jamaica] You honestly look at these
and think it's gonna be really dense,
but it ends up just being rich
in, like, the perfect
creamy, fruity, balanced way. Oh.
This dessert truly celebrates Mignon
and the things that she loves
while also transporting us
back to the '80s.
