The Breakfast Rap

1
- My new best friend.
- What are you doing here?
Can you, like, put some speed on it?
Yes, Boss.
- This is parsley right?
- No, it's chervil.
I'd like to see
how you remove the seed.
Stranger things have happened.
Oh, not bad.
I'm hungry already.

Right. My name is Altimet.
My mother calls me Ahmad.
Syed Ahmad if she's upset at me.
I'm gonna be 44.
I run some businesses,
and I help people make music.
Basically.
Breakfast is the most
important meal of the day.
It can make or break your day.
So I believe
in starting the day right
with a hearty breakfast
that tastes good,
feels good, and looks good.
My name is Thevi
and I am 43 years old.
I'm a mom of two.
I'm an Instagram chef.
I started this page
about six years ago.
I've just been posting recipes,
sharing, you know, tips
on how to make life easier
at home when you're cooking.
That's what I do.
Thevi
my new best friend.
I'm sure, you know I mean
he's he's probably
an experienced cook.
I'm looking forward to helping him
learn a few techniques
probably teach him
a few hacks, you know?
Altimet, my best friend.
I just came to tell you that
as of today
you're my new best friend.
What is it that you need?
Small favor, small favor.
I'm going out
with some of my friends later
but I invited them
to come over for breakfast.
So, you know, maybe you can
give me some tips on how to make
something light for me and the boys.
- Something easy?
- Something easy definitely.
It is my off day.
- It is your off day.
- It has to be fast.
- I'm not good at cooking.
- It has to be quick.
Cooking was a chore because
my grandmother, who brought us up
she used to make us, you know
Okay, so you either cook,
you clean the house
or you clean the garden.
In order for me to love this,
I better start enjoying cooking.
You gotta love it.
If you don't love it,
it's not going to work.
Okay, I can. Sounds like a plan.
But first I need to give you an apron
because you're going to be
my assistant
- and I'm not gonna cook. Okay?
- Yes, Boss.
We're going to just do a few dishes.
What do you have in mind?
Something easy
because I do know how to cook.
Yeah, I've been I've been eating
for about four decades now.
I'm pretty experienced at that.
Cooking, not so much.
I mean, I can cook to survive,
to save a life, yeah.
But, you know, if you're expecting,
like, Masak Lemak Cili Api
and all these,
they're outta my league.
So light, easy,
and it also has to look good?
- Yes. Yeah.
- Okay?
So I'm gonna suggest folded eggs
on avocado mashed and toast.
And then we're gonna have
some hummus.
And then we're going to end it
with a Greek bowl.
I asked Thevi to help me
with some breakfast stuff.
Breakfast meals. I love breakfast.
Basically around the clock.
I've had cereal, scrambled eggs
and things like that.
Breakfast is the most important part
of your meal.
You know, it's the first thing you do
when you start your day.
- So you're ready?
- Yes.
Okay. So for the first dish
we're gonna do folded egg
on mashed avocado on toast.
I'm hungry already.
So first up, I need you
to help me get those avocados.
- And when you go to the grocers
- Okay.
you see two types of avocado.
I mean, you see the ones
that are green, okay?
And of course, you see the ones that
are slightly on a darker version.
The green ones are still unripe.
They're hard, they are raw,
so you can't eat them.
So you can put this aside.
But then you look at the
the darker green ones.
- Okay, they're nearly black.
- Yeah.
So if you touch it,
it's got a slight soft touch to it.
So that's ready.
I try to be a fast learner.
In music I spend a lot
of time learning
because I didn't have
a lot of mentors.
I just have to learn by myself.
And it took a lot of time.
So now I realized that learning
from a teacher, from someone
makes it much faster.
How do you going to How are
you gonna cut your avocado?
- Well, the seed is
- Okay come let me show you.
So what you do is you slice it
and you go right all across.
You twist it
and then you have it.
Right. Perfect.
You know, I've seen pictures
of avocado cut open
with and without the seed
so I wasn't quite sure
how to remove the seed.
So I want you to do the next one.
I'd like to see
how you remove the seed.
I removed it, but, you know,
it kind of ran away from me.
I hope he's in a better place now.
- That's fine. It's okay.
- We're not using that part.
We're not using that part,
so it's fine.
Scoop out the flesh.
Oh, we needed some lemon.
So can you get
grab a lemon for me?
- I'm really making you work, huh?
- Yes. Yes.
Okay. What happens is when you
squeeze this lemon
it maintains the color
of your avocado.
And also gives some freshness
to the avocado mash.
- Understood.
- A pinch of salt
pepper, put a splash of olive oil
about a tablespoon.
Eyeball it if you I mean
- Agak-agak, you know? Yes.
- There you go.
- Agak-agak. Okay. Yeah.
- That's about a tablespoon.
I'm sure everybody would agree
from your parents
you learn how to eyeball things.
You know, you don't really measure.
My grandmother used
to dump everything
and if she had that little bit
of flour left in the bag, she said
"Just dump it in."
With a dash of love,
everything turns out fine, you know?
So I think that's what I learned
from my grandmother.
So usually when the avocados are
a bit more softer
it's easier to mash.
But this one seems to need
your muscle, so you need to do it.
You see, this recipe is easy.
But how come
this requires some effort?
- Let's just
- Some effort. This is easy.
Trust me.
Can you, like,
put some speed on it?
'Cause your friends are going to come
and I really need to go out.
Yes, Boss.
- Best friend!
- Best friend.
And then you wanna just put it aside.
- Now, let's do the toast first.
- Okay.
So today we're gonna use a sourdough.
You've got two friends
coming over, you said?
- Yeah.
- Two friends? Okay.
- Two plates?
- Yeah, two plates.
Do you think they'd share?
They can also do that.
That'd be easy, right?
Stranger things have happened.
So now we're gonna prep the eggs.
So maybe get two eggs,
grab some milk for me.
Now, so you're gonna crack
two eggs into this bowl.
You know I can do this
one-handed, right?
Oh, not bad. Not bad.
Okay, I hope your friends
like the eggs crunchy.
I hope so. I hope so.
Let me just take out the shell, okay?
Grab some milk for me.
Excuse me
this is yogurt.
- In theory
- I know.
Yogurt is milk.
I know sorry.
And then you're going to put
about three tablespoons of milk.
- Okay.
- Some salt and pepper and whisk it.
Okay, you want it
to be fully incorporated
because you want your eggs
to look creamy.
How do you know when
it's fully incorporated?
When you see those pockets of white
you gotta whisk it even more.
Okay, that's good.
So second dish,
we're gonna make the hummus.
Hummus. Hummus.
It's on the inner voice. Hummus.
I like it. I like it.
It's a bit of an acquired taste.
As a snack is great. We usually
have it as a spread at home.
You know, just put it on
some bread and peanut butter and
it's good to tide you over
for at least a couple of hours.
So basically, hummus
is blended chickpeas.
Well, we're gonna make
this dish look pretty.
- Okay.
- Thevi's Kitchen style.
- Okay?
- Thevi's Kitchen.
We need to get garlic, paprika
- cumin powder.
- I think all of it is here.
So what I need now is
a clove of garlic
for this bowl of chickpeas. Okay?
These are cooked chickpeas.
So basically, canned chickpeas.
- Let's say I buy a can of chickpeas.
- Okay.
How do I tell
if it's raw or it's cooked?
Canned chickpeas is always cooked.
- Okay, so it's easy.
- But Yeah, it's easy.
This is something that I stole
from my mother-in-law.
You make magic from your pantry.
Back then, they used to have
just, you know, canned food.
You look at a can of soup, you think,
"Oh, how exciting can it be?"
When you put everything together
the simplest dishes become
the most comforting delicious meal.
So we got a clove of garlic. Great.
- Almost.
- Yeah. Let me teach you
- how to Where?
- Please, go ahead.
Where's the rest of the garlic?
Oh, here. Okay.
Like that.
And that's it. Easy. Done.
You're just a treasure trove
of information.
- Okay, let's just put two, in case.
- Knowledge
A teaspoon of cumin powder
and then just
half a teaspoon of paprika.
Don't forget to remove that seed.
You don't want any bitter seeds.
Pour some olive oil in
and some pepper.
Okay, pulse it.
Yes. Great.
Okay, I think that's pretty good.
- Maybe do the honors of tasting.
- There you go.
Do we need
to add more salt or some
No.
- Are you sure?
- It is for me.
- Are you happy? If you're happy
- Yes, very happy.
- then your friends would be.
- Yeah.
If my friends don't like it
- I'll eat all of it by myself.
- Okay.
All we need to do is place it
in the chiller
while we make
the second part of the component.
- Okay, be right back.
- Okay. All right.
So now we're gonna do
the next part of the dish
- which is roasted chickpeas.
- Yeah.
So I need another bowl of chickpeas.
- Another bowl of chickpeas.
- Yes. Okay.
- Yes. Okay.
- Cool.
So what we're gonna do is
we're gonna use a paper towel.
We need to dry them really well.
If not, you're going to
end up with an explosion.
So you wanna dry them for me.
Try not to lose the chickpeas, yeah?
- All Most of them are here.
- Okay.
I'm gonna use the same spices again.
I like air-frying stuff
'cause it's easy, less messy.
- What do you think?
- I know I've got one for my mom
but I haven't got one for myself.
See, my mom only have
good things to say
about the air fryer.
So you should get one for yourself.
- I will. I will.
- Yeah.
Speaking of cooking stuff, how
how's Thevi's Kitchen doing?
When I started off,
it was just a recipe blog
you know, it was something
for me to do for fun.
But now I feel that it's
it's slowly taking off, you know?
- Yup.
- I'm sharing more.
You know,
I've got a bunch of great followers.
I try to keep them entertained
with, you know, a little quirk
of some of my funny things
that happened in the kitchen.
Keep them informed with
the new tips that I've discovered
how to do the folded egg.
Everybody seems to be caught up
by the, you know, the eggs.
They actually send me videos
and pictures, then they say
"Oh, my god."
And I say, "It's great," you know?
I hope, you know, this can continue.
I can keep them entertained,
you know? Yeah.
So while we wait for the chickpeas
to roast in the air fryer.
- Okay.
- We're gonna do some jammy eggs.
- Jammy eggs, huh?
- Jammy eggs, yes.
Now, it's not jam
but it's like You know, those eggs
that are set outside
and then you've got this
beautiful runny yolk.
- Oh, okay.
- It's going to be delicious.
I'm gonna be Yeah, I like
I like runny yolk.
Yes, me too. My favorite.
I love eggs.
So now we're gonna boil
some water first.
Is it really important
for you to be boiling?
It doesn't have to be
like those drastic boils.
- Yeah.
- It's gonna be gentle boils.
Let's put the eggs in one at a time.
We're going to cook it
for six minutes.
Have you started your clock?
- Got it.
- Okay, so for six minutes.
I'm gonna go and get the
avocado and the ice bath.
- Oh, yeah, yeah. Okay. I'll wait.
- Okay. Yes, I'm gonna come back.
I can see parallels of making a meal
and putting a song together.
You know, there's a process, yeah?
There are parts where you improvise.
There are parts where
you have to follow the structure
or the SOP, maybe you call it.
You're creating something
for someone to consume.
And it's quite interesting to see
the similarities and differences.
Okay, how we're doing? Okay, good.
Okay, okay.
We're gonna use this ice bath.
Take out the eggs one at a time,
and place it inside here.
Okay, so let it chill for a bit.
Shall we toast the bread?
- Yes.
- Okay.
What kind of breads do you like?
You know, we st Of course,
all we Malaysians
we start with regular white bread.
- Yes, for sure.
- You know
and then we start
to experiment with wholemeal.
Yeah, and I think during the lockdown
it was when everybody started
making their own breads at home.
- Did you try making some?
- Yeah.
No. But my friend
a couple of my friends
started making sourdough bread.
- Okay.
- Their own bread.
They're making a lot. So I buy
I buy from them, and I just
That's a great idea.
So while we wait for that to toast
we're gonna make your eggs.
Looks like professional stuff, right?
Yeah. This is my favorite skillet.
Look at that.
I saw you do this just now,
so I'm gonna try.
But be careful when you're holding
the cast iron skillet when it's hot
you won't be looking so fancy
when you're holding the pot lid
Give chance, la.
It's like scramble,
but you're just folding them.
So you like to push it.
So you push it
in one circular motion.
I really thought it was going
to be like, you know, the omelet
the one that's runny inside,
I thought it was folded eggs, but no.
Like, it's somewhere in between
an omelet and scrambled eggs.
So we're gonna take
the mashed avocado. Okay.
You look like a pro.
There you go.
So we're gonna put
a little bit of pepper
and then maybe you wanna add
some of your greens on top?
- Okay, good.
- Yeah, just make it pretty.
- And then we'll do the next one.
- Okay.
Oh, you're pretty good at this, huh?
I'm pretty good at scrambled eggs.
I'm pretty good at making stuff
that doesn't look nice.
Easiest scrambled eggs, taste good.
It is good, but it doesn't have
to look good.
You know, when
when it comes to breakfast
sometimes I'm a bit more practical.
You know, I just wanna get a certain
amount of good nutrition in me
you know, in the shortest
possible time.
Eggs is good.
Okay. Let's do this.
Well done.
- That looks. Great.
- Thank you.
It wasn't that hard, you know.
But I know it impressed people
when you say
"Hey, bro, I made some
folded eggs for you."
We bett Well, we better hurry up
because your friends
are gonna be coming soon, right?
Okay. We're gonna check
the jammy eggs.
What I usually like to do is, like,
I like to crack them
I will leave them in.
When you crack the eggs, sort of like
you know, the water goes through
and leaves like a pocket
so it's easier to peel.
- Right. Okay.
- So that's another tip for you.
Yeah, Let's peel one and see whether
you've got a beautiful jammy egg.
You wanna do the honors?
- First, I gotta pick the right egg.
- You gotta pick the right egg.
I think the pressure test
was definitely the
the jammy eggs.
It's not something easy to do.
The pressure's on
and peel it gently, yeah?
Okay, it looks it looks
- It looks promising, yeah?
- It looks promising.
The test the real test is
when you slice it open.
Okay, perfect.
I'm impressed.
He was very gentle with his peeling
of eggs. So really good.
Okay, it looks like we've done
- perfect jammy eggs.
- Yup.
Okay, now we're going
to plate the hummus.
Okay, if you can grab me two plates.
So you just take
maybe two tablespoons
and do a a nice spread.
Shall I teach you the first round
then you do the next?
- Yes.
- Okay, great.
Best friend.
Now, what I like to do is that
I like to sprinkle
a little za'atar. So basically
it's a Middle Eastern spice blend
just brings the whole dish to another
- level together altogether.
- All right. Yeah.
It looks a bit pretty also, you know.
- Yes. Yes.
- Okay.
And then we're gonna add a drizzle
of olive oil and
a nice piece of flatbread
here at the side.
Okay.
It's gotta have some greens,
you know?
So it looks pretty, you know?
This is parsley right?
- Or no it's not?
- No, it's chervil.
And there you have it.
Now, for you to plate it, okay?
Smells lovely.
So your friends are going to be
impressed enough by this, huh?
I think anything more than
scrambled eggs, will impress them.
I will impress my friends.
They know, for me, I'm a simple guy.
Borderline messy.
I don't look at plating so much.
As long as the food is good.
But, you know, there's definitely
a plus point
if it's good and it looks great.
I can certainly appreciate plating.
Just a sprinkle.
So, yes
And that's it.
Well done.
- Thank you.
- Altimet's Chickpea Platter.
Chickpeas.
I'm sure he's just pretending
that he doesn't know how to cook.
But you know, for a first time,
a first timer "first timer"
he did pretty well.
So the next is to do
that yogurt bowl.
- Right. So I found these.
- Okay.
- Excellent.
- Some fruits.
So why don't we cut the fruit first?
What's your favorite fruit?
Are you a durian fan?
- No.
- You're not a durian fan?
- No, I'm not.
- Oh, my goodness. Why?
You see, my mom
doesn't like to eat durians.
- Okay, okay.
- So, we tend to follow
- Right
- You know our mothers inform
- influence our tastes a lot.
- Okay. Yeah.
Okay, we're going to
build the bowl, okay?
Put a tablespoon of yogurt in.
Spread it out so that You know,
like, just like the hummus.
So you don't have, like,
just a blob of it.
- Right. Yeah.
- Yeah. So now what you can do is
you can arrange your fruits.
Okay, let's do it together.
Let see whose bowls is
Challenge accepted.
Hey, don't copy me, huh?
Do you like granola?
- Yes, I do.
- This one is a gula melaka version.
I love coconut. I'll just add
like, a sprinkling of coconut here.
Some creaminess, some saltiness.
- My favorite. Chunky peanut butter.
- Right.
You just dollop that right on top.
This is definitely
going to fill you up.
They better come hungry, you know.
I'm sure they are.
So that is my bowl.
Okay, now you finish yours.
Well done. Look at that.
There you go, boys.
I think my guys are here.
Oh, okay. Then you better get going.
Yeah Let me go and greet them.
Okay.
I think everything seems
perfectly done.
- Thank you, best friend.
- Thank you.
- I'll tell them you made this, okay?
- Okay?
They won't They won't
It looks so good.
- They won't believe I did it.
- Okay.
But yeah, let me go say hi to them.
Okay, see you.
- Wassup, bro?
- Hey, guys.
Good morning..
Timing, timing. Morning, bros.
- How are you doing, man?
- Good, brother. How's it going?
Good. Come
Enjoy. Breakfast. Breakfast.
I'm Malik, and this is Hanafy.
We are both good friends of Altimet.
- Yeah.
- It looks good.
It looks good, right?
All right, this first one is
folded eggs on top
of avocado mash and toast.
This one is hummus.
Hummus is chickpeas.
And then there's roasted chickpeas,
there's jammy eggs.
And lastly, you got some yogurt
with some fruits,
granola, and coconut.
I got a chef, a certain chef
to especially make this for you guys.
- Has he ever cooked for you?
- Nope.
Nope. Never.
It will be weird
to suddenly ask Altimet to
- "Hey, bro, cook for me, please?"
- Yeah.
- Dig in, guys.
- We will.
- Yo, is this peanut butter?
- Yeah bro, peanut butter.
This time around
I put in some yogurt.
- Healthy stuff.
- Yeah, healthy stuff.
What is this one?
This one is Hummus.
It's actually chickpeas.
And then some of it was roasted.
Hummus is good. I've actually never
tasted hummus like this before
and I'm actually
not a fan of chickpeas
but this chickpeas I like.
Yeah. Yup.
Hello, best friend.
- Best friend.
- How are things going?
I'm Thevi, nice to meet you.
Are you the special chef
that he was mentioning?
I said "a chef,"
and this is Thevi's Kitchen.
How did you enjoy the eggs
and then the hummus?
Dope, I like it.
Which is your favorite dish
of all the
The granola? I mean the granola bowl.
Look at your bowl. Yes.
- I like this one. Yeah.
- Okay. Oh, the hummus?
Okay. Do you know
what's the twist in all this?
- What?
- It's your brother who did all this.
- No way.
- He cooked everything.
I just supervised at the side.
You know, he did everything
on his own.
Thank you
I'm very surprised
he actually cooked for us.
Very surprised.
Surprising. Absolutely shocked.
Yeah. Don't disturb me on weekend.
No, that's it. That's it.
But if you ever come
and see me and said "best friend,"
that's the code.
- Okay. Yes.
- That Thevi needs my help.
I'm gonna come through
for my best friend.
- Okay. Okay, enjoy, guys.
- Thank you, Thevi.
- Have a nice time.
- Thank you. Thank you.
All I can say is Altimet,
the next time I see you, I need help
I'm just gonna say "best friend"
and you're gonna help me.
- Plot twist.
- Open a restaurant now.
No. It's a cool idea,
but if I open also I just
maybe I'll just be a waiter.
I cannot do all the cooking chores.
- You can be a cashier.
- Cashier, I can.
Bro, if you ever cook,
do it in a small scale for us
we will appreciate that.
But if you ever wanted to do it
in the big scale
I will still support your food
because it's that good.
Next time try the sea bass.
Cook sweet and sour or something.
Just keep doing what you do
in the kitchen.
You know, it's always nice
to be adventurous
and nice to work with the kids
because we both have children
and it's nice to always participate
and get them involved, you know?
So that's great.
Oh, that depends if my wife
allows me.
That's her domain, so to speak.
She's kind of protective, so
you know, need to ask her first.
If she says, "Can"
I'll be in there.
If she say
"Cannot," then I'll just
wait until she is
in a better space maybe
and ask.
Yeah.
