Andrew, this is the squad.

Andrew called
with a party that's full of fun.
Let's start with who you're nominating.
I am nominating my friend
and colleague Will,
who is the founder of Varsity Gay League.
We are the largest LGBTQ recreational
sports organization in the country.
- Wow.
- Yeah!
[Andrew] It's Will and I
who run Varsity Gay League.
We work about 12 hours a day
just to knock this out,
and bring people together,
and keep this community intact.
We do kickball, soccer, bowling,
dodgeball, tennis, and beach volleyball.
Nice.
I mean, I think his favorite sport
is winning. Look at him jumping for joy.
Who doesn't like to win?
He does love winning, but he loves
bringing people together more.
- That's awesome.
- What is the event?
We are celebrating our 15th anniversary,
and our guest of honor is Will.
- [Gonzo] Nice.
- [Maya-Camille] That's major.
When it came to Varsity Gay League, it was
about making people feel like they belong
and having somewhere to go.
And it really took his sacrifice
to make this community.
- [Christina] Tell me about the event.
- It's going to be outside.
It's gonna be this crazy party.
It's gonna be drinks and food.
Talk to me about color, themes.
What's the spirit there?
Well, especially since we're queer,
there's gonna be a lot of rainbows.
- [Christina] Color.
- [Andrew] Yes.
- How many people are we baking for?
- You will be baking for 200 players.
- Oh, wow.
- Whoa.
Wait. [laughs] 200 people?
That's That's the biggest party
we've done so far.
There's always a way.
- We'll make it happen.

Okay, let's get down
to the nitty-gritty food details.
What does Will like?
What are you hoping for at the party?
Will likes desserts
that are gonna be nostalgia.
Cinnamon buns.
- Okay.
- Pumpkin pie.
- Nice.
- Yes.
Pineapple. It is the best.
Like rum cake with pineapple.
Cookies, cupcakes.
Yes.
And he loves spicy watermelon margaritas.
[Christina] What about nostalgic candies?
In his house, he has a drawer
of Starbursts and Laffy Taffys.
Goes without saying but I have to ask,
why does Will deserve this?
You know, Will has put
everything in his life on pause
to make this organization what it is.
And that's been taking 15 years.
There really hasn't been a moment
to just celebrate Will,
and this party is it.
And it's not just about
throwing a ball around
with people in a park.
There's a deeper meaning to it.
My life has changed
since I joined Varsity Gay League.
Once I joined, within the first week,
I felt like I belonged.
It really is just the means
of building this community
and finding a support system.
[Christina] This is a huge task.
You have just seven hours
to make an epically gigantic dessert
for Andrew's party.
That's why I'm gonna
set you up for success.
I'm not gonna task you all
with making this dessert alone.
This is going to be
a team challenge!
- Yes!

For 200-plus people, I think
you're gonna need an extra set of hands,
and I thought it'd be fun to pair you up
in ways you haven't baked desserts before.
Maya-Camille,
you've never worked with Ashley.
Christophe, Gonzo,
you have never worked together.

- [Christina] What do you say?

We are gonna be baking
for the Varsity Gay League.
The hardest thing is there's
many, many things we actually need to do
in order to feed 200 people.
This could be the start
of our inspiration. So, rainbow colors.
Balls. Um, and treats.
[Ashley] We should focus
on finger food here.
There's gonna be a lot of people at this
event, so easy to grab, easy to enjoy.
And this is what he loves.
He loves, like, the whole snacky,
candy-filled element of treats.
What are we thinking?
He loves cinnamon rolls.
- We need to add that.
- Okay.
[Maya-Camille] Ah-ha-ha-ha-ha!
Jell-O shots.
Oh, yes!
[Maya-Camille] Blondies.
- Cake balls.
- Cake balls. Easy to mass-produce.
[Maya-Camille] If we're gonna do
cake balls, we also need to do a cake.

We gotta split up who is doing what.

What if we create
some sort of, like, trophy cabinet
with trophies and medals, footballs?
We can create different cakes,
chocolates, confections.

They're really into sports, but overall,
they love to party. They like to drink.
So I think that every single flavor
we do in here should be drink-related.

teamed up with the queen of flavor.
They're going to bring it on.
It's gonna be a tough competition.

- I'm gonna start getting my cake in.

So I'm making for five people

The trophies
Today we have to bake for 200 people.
We really need to be organized.
- I am putting myself into a cake mode.
- [Gonzo] Channel your inner Ashley.
And determinate which one
has the strongest skills
in certain criteria.
[Gonzo] I'm gonna
jump on chocolate task right away
and start casting every one of the pieces
for the trophies, the football,
the baseball, the bat,
the whole nine yards.
And just split up this list in two,
in order to be successful.
Morning, Chef.
- Oh, good morning.
- Hello, hello.
You guys are just flying
all over the place.
Talk to me. What are you planning?
We saw the picture of Will
holding an actual trophy,
so we're creating a beautiful trophy case,
filled up with edible sports items.
Chocolate baseball bats,
chocolate baseball mitt,
chocolate baseballs, chocolate footballs.
[Christophe] Tennis racket
made out of sugar.
We're also bringing in
a non-official sport which is beer pong.
Beer pong. Lord.
[Gonzo] We're making a beautiful cake
that is gonna be our beer pong table.
We have these little edible party cups
with a little fun shot to drink.
I love the vision,
but you have a lot of mouths to feed.
Two hundred people!
The largest number of people
we've ever baked for at Bake Squad,
and you've gotta fill
an entire trophy case.
You gotta have each other
on time management, because you know him.
He could spend the entire bake
on making this tennis racket perfect.
And you know him.
He could spend the entire bake
making a baseball out of chocolate.
I'm gonna leave you with this thought.
It's very serious.
Why did the baseball team sign a baker?
'Cause they needed a new
batter!

Get that batter in the mixer!
I'm gonna write this one in my book.
[metal clangs]
- [Ashley] Uh-oh.
- I hear you start to break the kitchen?
[Ashley] It's all a distraction.
This event today is gonna be huge.

- Yeah. There's over 200 people.
I'm literally pacing.
- I have too much to do. I can't think.
- [Maya-Camille laughs]
[Maya-Camille] We have over 600 pieces
we have to make for this huge float.
So the best thing
for us to do is to divide
And conquer.
[laughter]
I am doing the whoopie pies while I wait
for the yeast for the cinnamon roll dough.
- So I'm doing two things at once.
- A lot of multitasking today.
- A lot.
- Mm-hm.
I'm gonna get my cake in the oven,
then move on to the Jell-O shots.
Just gotta keep bouncing
from one project to the next.
The cakes are in.
If Maya needs help I'll give her a hand.
I know you're gonna do the same for me.

[Christina] Tell me
about what you have planned.
We're gonna go big with the rainbow theme.
We have this vision
to create all these spheres
covered in bite-sized desserts.
[Maya-Camille] Red whoopie pies.
[Ashley] Orange cake pops.
[Maya-Camille] Yellow rice treats.
[Ashley] Green blondies.
[Maya-Camille] Blue coconut macaroons.
[Ashley] Purple lollipops.
[Maya-Camille] In the center,
we're going to have cinnamon rolls.
- [Ashley] Rainbow Jell-O shots. Fudge!

[Ashley] And a foam finger cake
to top it off.
[Christina] You almost have
a thousand individual items,
and each one of those has to be perfect.
How are you gonna get it all done?
We have four hands.
Octopus. It's time
to start baking with your feet.
Exactly. We're gonna use all extremities
today to pull this off.
My question for you is,
how are you gonna present this?
We're really wanting
to display this like a parade float.
If you can make me a little cake stand
for my foam finger, that'd be great. Okay!
Okay, there we go. Check, check, check.
I'm gonna go hard for this.
Time is of the essence.
You gotta get baking.

I'm still scooping whoopie pies.
I'm piping the chocolate right now
for the picture frames.
In order to make
this giant project happen,
I need to cast hundreds and hundreds
of different pieces.
I'm piping the rings
and the many components
I'm gonna be using for the trophies, okay?
- [Christophe] Working on the trophy?
- [Gonzo] Yeah.
- [Christophe] The football? Baseballs?
- [Gonzo] Yeah.
- [Christophe] Oh my gosh.
- It's a lot of chocolate items.
Six hours to go!
[Ashley] It goes so fast.

We're moving fast, Gonzo. We are.
[Gonzo] Let me take these cakes
out of the oven.
[Ashley] Get my lollipop mixture together.
It's just corn syrup, water, and sugar.
Cook it to a hard-crack stage,
add some color, add some flavor.
And put it in a lollipop mold.
- Number one, number one, number one!
- [Maya-Camille] Oh, nice!
[all] Number one!
When you think of sporting events,
you see that foam finger
rooting the people on.
I think there's no better way
to celebrate 15 years
than to have
a giant foam finger cake for Will.

Will loves watermelon margaritas,
so why not make it into a cake?
Adding some tequila,
fresh lime juice, simple syrup.
The cake is just gonna soak all that up.
This cake, it's a vanilla sponge,
and I'm soaking it
in this lime margarita syrup
and layering it
with watermelon buttercream.
Have you ever had
a watermelon margarita cake?
- No.
- Me neither.
A one-of-a-kind cake
for a one-of-a-kind type of guy.
Trying to make it taste
like a watermelon Jolly Rancher.
[Maya-Camille] Cereal treats.
[Gonzo] I'm cooking here
the pineapple for the beer pong table.
I can see a lot of color on your station
over there. What are you working on?
[Maya-Camille] Making fudge.
This is so pretty.
I want this art in my house.
- Nice eggs, my brother.
- [Gonzo] So I have these different eggs.
I'm gonna cut these eggs. These are gonna
be the main part of each of our trophies.
This is going to be
for the beer pong table.
These guys are about having a good time,
so we're gonna make tiny beer pong tables,
which is a vanilla cake
with caramelized pineapple,
a coconut rum soak, and a coconut mousse.
We're thinking about
recreating little party cups,
and I'm casting these molds
with white chocolate.
We're gonna unmold them and fill them up
with this coconut liqueur ganache.
- [Christophe] Can you make extra?
- We're gonna do some shots.
Gotta be a little fun shot to drink
and to combine with the pineapple cake
my friend over here is making.
- Let's put this in the cooler.
- [Ashley] Two more colors to go.
[upbeat music plays]
[Maya-Camille] The cereal treats.
This is yellow.
We're making two different flavors
of macaron. We have lemon and orange.
For this beautiful case,
we're trying to incorporate
as much color as we can.
[Christophe] Bit of yellow on my macaron.
Going to represent the tennis balls.
And the orange one
will be for the basketball.
Hopefully it's gonna make
a beautiful macaron.
Maya-Camille, Ashley!
- How will this do?
- Oh my gosh.

There's a lot of empty space
that has to be filled with your creations.
I'm gonna leave you to it 'cause you have

[Ashley] I'm competitive
in most aspects of my life.
I grew up playing sports.
I played volleyball,
I was a swimmer,
basketball, softball forever.
So it's still in me,
this, like, deeply competitive person.
I like to win, okay?
I'm just gonna say it.
Look at them. Sweating already.
- Four hours remain.
- [Ashley] Here goes nothing.
Have our margarita soak up this cake.
And with the watermelon buttercream
This is a first
for this flavor combination.

[Maya-Camille] I have cereal treats done,
and I am working
on the second batch of the whoopie pies.
I've also got
the cinnamon rolls in progress.
We're gonna use these
as the handles for our trophies.
- Oh my gosh.

If you're comparing display to display,

Trying to go against me

Should we do a quick check of colors?

This blue might be a bit too dark.
This yellow, for me,
is living in between yellow and orange.
Technically, everything is beautiful.
But if your colors don't match,
it's gonna feel like a bake sale,
as opposed to a Bake Squad pride float.
- I am rooting for you.
- Thank you. It's gonna be beautiful.
I got yellow cocoa butter.
We need to color
the white chocolate ganache
as fast as we can and just drizzle it.
It's looking good over here.
How's our beer pong game going?
What are you filling?
[Gonzo] I have a very liquidy ganache.
That is actually edible.
So I casted the actual cups.
- Those are made out of white chocolate.
- [Christina] I'm so sorry.
I picked it up thinking
that it was one of these babes.
They look like them.
But I actually casted these
then painted them with red cocoa butter,
so they look exactly the same.
- But they're actually edible.
- Dude! This is You had me fooled.
Bam. Babe Ruth, right here.
Maya-Camille and Ashley
are definitely going big today.
It's definitely inspiring us
to go bigger, better, and bolder.
So I gave myself
into a full-on baseball mode.
On top of all my chocolate baseballs,
I'm creating a baseball mitt
out of modeling chocolate.
Are you okay, or do you need a hand?
[both chuckle]
[Gonzo] And I'm also creating
this chocolate baseball bat
with different layers of white chocolate
and dark chocolate
to create that wood effect.
- Wow! What a big bat.
- I'm working on the baseball bat, buddy.
Once my chocolate has crystallized,
I start carving it down
and rounding out the edges.
This takes hours, but I don't have hours
in here today. So I just need to hustle.
Once it gets polished,
you give that wood effect to it.
It's beautiful.
I made 400 whoopie pies.
Now I have to fill them
and roll them in some sprinkles.
[Gonzo] These are gonna be
beautiful picture frames. Hello.
[Ashley] When I'm stacking and carving,
I get in the zone. Nothing else exists.
- Finishing up my chocolate truffles.
- [Gonzo] Those look great.
[Christophe] Thank you.
Gonna dip these in the orange ganache,
add some sprinkles, make them super cute.
We hear Will loves pumpkin,
so the orange cake pops are vanilla sponge
with a pumpkin-flavored buttercream.
Cake balls, as small and harmless
as they seem, they're kind of a nightmare.
Cake pops, and then get these scooped,
dipped, decorated.
If you don't have perfect consistency,
they can be too crumbly.
Your chocolate can crack
if they get cold too soon.
Little cake balls, but a lot
of big problems that can come from it.
Probably gonna be dipping these balls
for another hour.
[Gonzo] We are making
our Baileys truffles.
I'm going to create
a beautiful chocolate truffle,
with a little bit of Baileys
in the inside.
And rolled into those beautiful sprinkles.
It's all about fun. We're gonna add those
inside of our actual football.
The cool thing about this
is they actually get to crack it open
and there's gonna be the surprise factor.
It looks like a football,
but it's a candy jar.
It's a chocolate illusion.
David Copperfield and Houdini over here.
- I don't know who's that guy, but yeah.
- They're magicians.

- [Gonzo] Houdini.
Houdini?
He's the number one
illusionist in history.
But he doesn't make illusions
with chocolate, right?
[chuckles]
Bake Squad, three hours remain.

- You think we're gonna make it?
I'm gonna feel more comfortable once
we get the elements inside of the case.
We don't have a lot in there yet.
I'm the most competitive person
in this team, for sure.
I'm an endurance athlete.
I do long-distance running.
I've ran 200-mile races.
So yeah. I like to win. I need to win.
- You know what?
- What?
If I wasn't in this competition,
- I would root for you.
- Aww.
-But today is different
-We're not.
[laughs]

[Christophe] Look at this beauty.
[Gonzo] Beautiful macarons
made by a French man.
[Maya-Camille] I am making
ganache glaze for the blondies.
Our treats are flavored
according to the color.
Whatever green looks good on that.
Nothing too dark. Nice and vibrant.
So the green blondies are vanilla flavor,
but the glaze will actually be mint.
I'm just gonna go ahead
and pour this glaze.
[Ashley] That's nice.
- [Christophe] Gonzo.
- [Gonzo] Yeah?
- What color shall we do the racket?
- Pink would be cool.
All right. So in order to make
this tennis racket realistic,
I'm pouring the sugar into a silicon mold
in the shape of a real racket.
- How are you gonna do the strings?
- With this sugar.
But now the hardest part
is making the strings.
Every single string
needs to be hand-pulled
and glued and attached one at a time.
- Bake Squad, two hours to go.
- Ay-yi-yi.
- [Christina] 200 people to feed.
- The display is empty.
The lollipops are going in.
17 down, 600 to go.
There's still so much to get done.
A basically empty float.
[Maya-Camille] So we need to get
the elements onto the float,
but we also have to complete
the things we are baking.
Cinnamon rolls.
And we are in a frenzy
trying to get it done in time.
Cinnamon rolls, working on that.
Whoopie pies, they're done.
Macaroons, in the oven.
Is the cake the only thing you have to do?
[Ashley] It's what I have to do right now.
So Ashley may be working
on putting something on the float.
I'm gonna go ahead
and finish up these mint blondies.
While I'm putting
cereal treats on the float,
Ashley's working on the cake.
- Bake Squad, one hour to go.
- [exhales] I need to catch my breath.
[exciting music plays]
[Christophe] All my strings on the racket,
and I'm gonna torch it around the side,
to glue them around the racket.
But I don't want to torch it too much.
- Somebody want to play tennis?

I brought you all kinds of fun decor.

- [Ashley] The cake flavor.
- It's a watermelon margarita.
- Shut up.
- [Ashley] Uh-huh. Here we go.
- [Maya-Camille] Boom!
It's layers of vanilla cake
soaked in a tequila lime-infused syrup,
with a watermelon buttercream.
That looks so good.
- Mm.
- Okay let's do it. Oh.

[Christina] I mean
Have you ever had watermelon,
lime, and tequila in your cake?
No. No, no. Never.
Gotta eat all of this right now.
You definitely taste the watermelon,
definitely taste the tequila and the lime,
but also like a zestiness to it.
This is as good as it gets for me.
The sponge is so fresh. It's so moist.
The watermelon is so celebratory.
It's so fresh.
I think you have proven yet again
why you are the queen of cake.
We're gonna put these down
because we're gonna tuck
into all these colorful things.
- What do you want to get after?
- Well, I love mint.
[Christina] You're gonna take
a mint blondie. What else?
[Andrew] I'm gonna do the pumpkin,
since I know that's a Will flavor.
Mmm.
[Christina] The colors

So I'm gonna do cereal treat,
and a Maya-Camille whoopie pie.

That's delicious.
I put, um, mint extract in the glaze,
and the intention was just to give you
a little touch of mint.
I didn't want you
to feel like you're eating chewing gum.
I can tell where you get your reputation.
I'm blown away.
This cereal treat. I just wanna say,
I love the color, I love the spirit,
I love the texture, especially
against some of the other soft items.
[Ashley] I took care of the cake balls.
They're a delicious pumpkin cake ball
with some cream cheese frosting in there.
There's definitely that density to it,
but it's also super soft.
This is really good.
And my whoopie pie,
it's gorgeous, it's fluffy,
it's rich in all of that
red velvet spirit.
Having the opportunity to have
one of your whoopie pies, Maya-Camille,
any day of the week for me,
is a huge win on my end.
Yeah.
My friend, here's the thing though.
We have to go.

It's all about the representation of Will,
and what Will has been doing
for the last 15 years.
We really wanted to honor Will
through everything he has been doing
for the Varsity Gay League.
[Gonzo] The frames are edible.
They're made out of chocolate.

The trophies are actually edible.
The footballs are edible.
Everything is made out of chocolate,
confections, sugar.
Look at that racket that my friend
made over here. It's made out of sugar.

and then we have the shotsies on top
with a delicious coconut liquid ganache.

You taste the cake,
and then, like, the rum and the pineapple
just kind of like sneaks in.

Nice, sweet, orange flavor.
It just tastes really fresh.
And, like, the wafer is just so crisp
on the outside, but so soft on the inside.
To your point, you get the chew,
you get the buttery richness
of that buttercream.
Mine was lemon and it was just as zesty
and just as fresh and just as impressive.
I mean, there's multiple visual illusions.
