But by a huge media contingent as well.
And Chef Ramsay made a promise.
(Gordon) We will complete the opening night dinner service at Hell's Kitchen.
(Announcer) That the Chefs were responsible for keeping.

So you got everything pretty much worked out in your mind? Yeah, I mean, these are things i know are good, and Yeah.
Since the day I walked in the door, I've thought of the finals.
There's a lot of things here in challenges I didn't want to cook, because I didn't want to let all the tricks out of the bag, so I have in my head exactly what I want-- big, bold flavors, but, you know, still very simple techniques.
Just want to keep it really solid and good.
Trying to figure out these mushrooms.
Honestly, I don't know what I'm gonna make on the menu.
I really never saw myself making it this far.
What else goes with that? I don't know.
When I over-plan, it doesn't work for me, so I just go with whatever pops in my head.
Think it needs a little bit of butter.

One hour to cook five dishes for all of his head Chefs in Europe.
I mean, they're gonna be super critical, so it had to be perfect.

And I was nervous.
This could definitely blow up in my face.

Okay, finalists ready, yes? Judging the amuse-bouche, please welcome James durrant, head Chef of maze in London.
Right, Holli, explain to James exactly what it is, please.
Okay, I have a virgin bloody Mary.
I have tomato consomme, and then a worcestershire foam.
And the worcestershire sauce is because james is english and you think he's good looking? Well, of course.
I like the combination of celery, though.
It was smart.

This is just a crystal-clear shot if ice-cold tomato water.
Just a little bit of jicama, some bell pepper, and then to sort of represent a Martini, it's a caper Berry.

Okay, I have four different types of caviar, and I have a beet glaze and a fenneled frisee salad.
There's a mild, lemon vinaigrette.
The lemon with the caviar, that's fantastic.
Very refreshing.

Uh, Jay? This is a grilled lamb loin, and it's served over sort of my take on a greek salad.
Feta, some cherry tomatoes, onion.
Now tough--tough decision.
It's really hard, 'cause they're both amazing.
If you had to choose, would it be for Jay or would it be for Holli? Um, I think if I had to go for one of them, I--I'd go for Holli's dish.
