Hell's Kitchen (2005) s16e11 Episode Script

Aerial Maneuvers

1 (male narrator) Previously on "Hell's Kitchen" - Who's it gonna be? - Me, Chef.
(narrator) Ryan volunteered to join the Blue Team.
It would be awesome if I can get them through a dinner service.
That's gonna make me look even better.
- Let's go.
- (narrator) In the slider challenge - Go ahead, Matt! - The chefs slid for ingredients.
- Onion.
- Parmesan.
- Truffle.
- Oh.
(Andrew) My three-year-old son would love this bouncy ball thing that's going on right now.
[laughs.]
(narrator) The judges were not impressed with Matt's shrimp roll with chipotle aioli.
Your greens are kind of wilted and over-dressed.
I agree.
A little too much heat for me.
What the [bleep.]
do they know? That's why they're running burger joints.
(narrator) But Heidi's cilantro chicken burger really wowed the judges.
I love it.
The little heat there at the end.
Thank you.
(narrator) And Ryan's spicy lamb slider impressed and tied it up for the Blue Team.
The cucumber is really smart.
(narrator) To break the tie, the winning team was determined by the judges deciding which chef had the best slider.
- Heidi, well done.
- Yes! Yes! - Good job.
good job, good job.
- Thank you.
I won it! It was my burger! (narrator) At dinner service Lobster.
(narrator) Matt's struggles on the fish station Matt.
VIP.
Curly-whirly over Hey, come here, you.
(narrator) Combined with his poor attitude My patience is running out.
Okay, Chef.
Okay.
(narrator) Turned the whole Red Team into a bickering mess.
If you guys are on apps, why the hell are you not bouncing around helping me out? So, you're blaming me 'cause your [bleep.]
lobster was overcooked? Hey! Shut up! (narrator) Another major problem was Kim's meltdown on garnish.
There's no stock in there.
- It's just dry.
- I'm sorry.
Get out! (narrator) In the Blue Kitchen Does anybody else feel this is slow? (all) Yes, Chef.
(narrator) Shaina's lack of urgency and lack of quality on garnish Come on, come on.
(narrator) Put her team in the weeds.
It's like monkey [bleep.]
.
(narrator) But it was Wendy's overcooked New York strip Hey.
- What does that look like? - It's over.
It's like she put that steak on Tuesday.
(narrator) That was the final straw that sent the Blue Team - All of you get out! - All: Yes, Chef.
(narrator) To join a bickering Red Team in the dorms.
Look, if you shut your [bleep.]
trap for one minute and just listen, Kim! - You shut the [bleep.]
up! - Hey! (narrator) At elimination, the Red Team nominated - Matt.
- (narrator) And Kim.
(narrator) While the Blue Team selected - Wendy.
- (narrator) And Shaina.
(narrator) And on the heels of major problems in both kitchens, Chef Ramsay not only eliminated Shaina.
- (narrator) But - Matt.
(narrator) As well to leave "Hell's Kitchen" and say good-bye to their dream of becoming head chef at Yardbird Southern Table & Bar at The Venetian in Las Vegas.
And now, the continuation of "Hell's Kitchen" Now, get out of here.
All: Yes, Chef.
Man.
Elimination was [bleep.]
crazy tonight.
Are you kidding me? The elite eight, and Kim's part of it? I am completely shocked Kim is still here.
Yes.
They got rid of Matt.
Matty Ice, and all 'cause Kim is a piece of [bleep.]
.
He's way better than that Ugh.
I hate her.
I-I'm [groans.]
I was praying for her to leave.
Actually, I'm glad she didn't, though.
Better for us.
["Fire" by Ohio Players.]
- Oh! - (Gordon) Hurry up! Fire, ugh - [screams.]
- The way you walk and talk (Gordon) Scallops.
Where are they? Really sets me off to a full alarm, child [evil laughter.]
- Oh! - (Gordon) Come on, guys, please! - When you're hot you're hot - [both scream.]
You really shoot your shot - You're dyn-o-mite, child - (Gordon) Get out! Yeah The way you squeeze and tease - Knocks me to my knees - (Gordon) Where's the bass? 'Cause I'm smoking, baby, baby [slo-mo yell.]
Well, I can tell by your game (Gordon) Hey, hey, hey.
Come here, you.
Come here! You're gonna start a flame (Gordon) It's just mistake after mistake after mistake! - Love, baby, baby - Whoo! (Gordon) It's just raw! Raw! Fire, yeah - (Gordon) Pathetic.
- Fire That's what I said, child Ow fire Uh-huh Let's go.
Quick.
- Oh, God.
- Ladies.
- Oh, no.
- What the [bleep.]
? I can't do it if my life depended on it.
- Oh, my God.
- Good morning.
- All: Good morning, Chef.
- How are you feeling? - Good, Chef.
- Scared, Chef.
Well, I see you've noticed my friend Brett up there.
Here's his partner, Rachel.
Ooh.
Hello.
I brought Brett and Rachel here to demonstrate something that I expect all of you to be able to do.
Whoa.
- Oh, my God.
- Beautiful.
Incredible.
Thank you.
Now, obviously I don't expect you to do the same kind of stunts that Brett and Rachel just performed, but there is something that those two incredible artists just did that I need all of you to do, and that is trust.
So, for today's challenge, we're gonna put your trust in each other to the test.
You will be working in pairs, and each pair will have to recreate one of my signature dishes, but your responsibilities will be divided.
One member of the pair tastes it, and one makes it.
You'll have to trust one another.
The pair that recreates my dish the closest will win the challenge for their team.
- Jesus.
- Got it? - All: Yes, Chef.
- Good.
"Taste it, now make it," is a "Hell's Kitchen" classic but Chef Ramsay's got a twist, so it just totally changes up the whole entire game.
Right.
Pairs.
- Want to pair? - Sorry, Paulie? - No, nothing.
- Are you mumbling to Ryan now? Almost like you were on a date? - No.
- What were you mumbling? He was asking me to be his pair, Chef.
I was saying, "Do you want to pair or split?" Oh, I see.
You're going out there first? I always try to think.
I trust Ryan as a cook, and Wendy can't cook, and I'm just sick of Devin as a person in general.
Okay.
Pairs.
You've got a minute to decide amongst yourselves.
- Pair or split? - Yeah, I mean, I think I would rather Wendy's got a really great palate.
I think she can pick out what everything's in there.
How do you feel, Devin? What would you rather do? I'd rather be with Paulie.
[sighs.]
Do you have a good palate or do you want to cook? I'm good at everything, so it's just at this point.
Okay, then.
Heidi and I and you two.
- Yes.
- Got it.
Red Team, who's tasting who's cooking? Pair number one? Kimberly is tasting, I will be cooking.
Pair number two, Andrew? I'm gonna be cooking.
Heather's gonna be tasting.
Wow.
Interesting.
Blue Team.
Pair number one? Paulie's tasting, I'm cooking, Chef.
Damn, I guess Paulie got dumped by Ryan.
Ryan, why didn't you go with Paulie? The boys wanted to go together.
Love it.
(Paulie) I asked Ryan if she wanted to partner up and she said no.
So, I got stuck with the [bleep.]
Devin.
Pair number two? I will be tasting, Ryan will be cooking.
Okay.
Listen carefully: Red Team, Blue Team.
You have 30 minutes to recreate my signature dish.
Your time starts now.
Let's go.
(narrator) Putting a new spin on a "Hell's Kitchen" classic, today one chef will taste You'll have to look and I'll taste.
(narrator) And then instruct their teammate on which ingredients they need to execute the dish.
Take that meat down.
(Heather) I feel great about this partnership with Andrew and I.
He's great at cooking.
I'm great at cooking.
We got this in the bag.
- Veal.
- Are you positive it's veal? (narrator) The chefs much trust one another and work together to correctly identify as many of the ingredients as possible.
- You think it's pork? - Yeah.
- That's definitely pork.
- Okay.
We'll go pork.
(narrator) Identifying the protein is essential to winning this challenge.
- You want veal? - It tastes like a pork chop.
So, you want to go with this? (Kimberly) I am pretty confident it's pork, but I kind of thought maybe it could have been the veal.
I'm gonna cook 'em both and then we can look at it.
- Yeah.
- Okay.
Yeah.
That's a pork chop.
I feel it's a veal chop.
- Really? - Mm-hmm.
It's not pork? Are you sure? (Wendy) I'm not 100% sure on this protein, so I take one of the slices and I lick it to see what it is without the spices.
I'll lick it again.
- It's definitely veal.
- Okay.
It's veal.
There's no way this is pork.
- 18 minutes to go.
- All: Yes, Chef.
(narrator) With their proteins chosen (Ryan) What's that puree, Wendy? (narrator) The chefs must now decipher the flavor of the puree.
It's definitely figs, and I think this orange stuff - here is the persimmon.
- Okay.
All right, Paulie, where we at? It's got pear and a little persimmon in it.
What is that orange thing that's in there? - The little diced - Maybe it's persimmon.
Like, a persimmon puree.
(narrator) While Kimberly, Wendy, and Paulie all believe that persimmon is the way to go - What's on it? - Apricot, mustard seed.
Apricot and mustard seed? That sounds good.
(narrator) Heather believes Chef Ramsay used apricot.
(Andrew) It didn't have any other dried fruit in it? 'Cause there is dried cherries over here.
No.
All I taste is apricot.
(Heather) It's sweet.
It's tart.
I know 110% apricots was on the plate.
- We have ten minutes to go.
- All: Yes, Chef.
Pull that pork chop and let it sit.
Do you want me to tell you what I feel is in the side? Yes, of course.
(narrator) For the final element, the chefs need to select the correct greens.
I think it's collard.
Okay.
(Andrew) Let me see the green again.
We're going Swiss chard, yeah? - Yeah, Swiss chard.
- Okay.
Are you sure that's not kale? (Wendy) I'm positive.
The green is spinach.
Don't slice those proteins too early, please.
All right, Paulie.
Where we at? [smacking lips.]
- That's spinach.
- Two minutes to go.
Push it.
Let's go.
- We got it.
- Nice blob right in the middle.
I'm telling you, I think it's pork.
- Okay.
- I'll go with pork.
- I'm pretty sure it's pork.
- I trust you.
(Heidi) It's really stressful not being able to taste it, but if Kimberly's telling me pork, I have to trust her.
This is what this challenge is all about.
You trust your teammate until the bitter end.
Hurry up.
Hurry up.
Hurry up and slice it.
(Gordon) 90 seconds to go.
[bleep.]
[bleep.]
- Burning me, man.
- Put it back in the pan.
Put it in, open it up.
Are you sure that's not pork? - I'm positive.
- Okay.
I trust you.
I believe you.
- 60 seconds to go.
- Flip each one over.
Paulie is micromanaging me.
He made me frantic and I hate being frantic.
Cap it.
Cap it.
Cap it.
Cap it.
(Devin) Paulie, man, just let me do my thing.
I got this.
Go.
Plate it.
Yeah, just No, no.
Put it on! Put it on! - Ten, nine, eight - I got it.
- Seven, six - Puree is on the bottom.
- Five, four - Grab the protein.
Three, Two, one and serve.
Let's start off with Devin and Paulie.
Slide the plate down.
- So, describe the dish.
- It's pork.
We rendered down the chorizo and cooked the spinach.
The underneath was persimmon, mustard seed, and a little bit of apple cider vinegar.
The pork, as you know, is still pink.
So, it was raw when you sliced it and then you cut it into chunks and then put it back in the pan, right? Well, that was the only option we had.
I mean, otherwise it was just straight raw.
Okay.
Thank you.
Yes, Chef.
Next one.
Wendy, Ryan.
(narrator) Wendy and Ryan chose a veal chop for their protein, accompanied by a persimmon puree and sauteed spinach.
- Why veal? - I trust Wendy's palate.
She's the pork queen.
Did you taste that? Actually, I just licked the outside, Chef.
Like a lollipop.
She licked the spice off until it was gone, Chef.
You licked the outside of the protein? Yes, Chef.
Okay.
Thank you.
You can put it down.
(Kimberly) Wendy's got more than a few screws loose, but I guess you got to do what you got to do, you know? If I got to lick something to try to win something cool, I mean, I'm probably gonna do it.
Andrew, Heather.
(narrator) Andrew and Heather have prepared a pork loin with apricot puree and pan-fried Swiss chard.
The pork is delicious.
- Thank you, Chef.
- Apricots.
Did you spot them or did you taste them? - I tasted 'em, Chef.
- You tasted.
- And did you spot them? - No.
I trust her palate, - so I went with it.
- Well, that is delicious.
- Very interesting.
- Thank you, Chef.
Right.
Slide down, please.
(narrator) Kimberly and Heidi's dish consists of spice-rubbed pork with persimmon purée and collard greens.
Wow.
The pork.
(Ryan) Wendy is, like, the pork queen, but when I hear that we're the only plate with veal, I'm definitely feeling a little bit nervous.
Why persimmon? (Wendy) I just had that sweetness, Chef.
- Mmm.
Ladies, good job.
- Thank you.
Yes, Chef.
Interesting.
First of all, Heidi and Kimberly, you had persimmon.
Yes.
Devin and Paulie, you had persimmon.
Yes, Chef.
Wendy and Ryan, you had persimmon as well.
Both: Yes, Chef.
Heather and Andrew, you had apricot.
And the right answer was persimmon.
- Mm.
- Yes.
(Heidi) That was one of the first flavors that Kimberly had told me, so it feels great that we got it in there.
That's okay.
That's okay.
That's okay.
That's okay.
Are you kidding me? [bleep.]
my life.
It's okay.
Now, Wendy and Ryan, you had spinach.
Devin and Paulie, you had spinach.
Yes, Chef.
Andrew and Heather, you had Swiss chard.
Heidi and Kimberly, you had collard greens.
The right answer is Swiss chard.
Oh, damn.
- Well done.
- Thanks.
Yes.
Good, good.
We at least got one thing right on the the plate, and I'm feeling confident.
- Yeah, right? (Wendy) The only people who chose the Swiss chard missed the persimmon.
It's kind of like the scales are just still teetering.
As far as the protein goes, which you know is the hero, three of you had pork.
Wendy and Ryan had veal.
The right answer was Please, please, please let it be veal.
"(narrator) In today's" I'll taste it, you make it challenge," the chefs paired up in an attempt to recreate one of Chef Ramsay's signature dishes.
As far as the protein goes, which you know is the hero, three of you had pork.
Wendy and Ryan had veal.
The right answer was Veal.
- Yes.
- [bleep.]
.
Wendy and Ryan, well done.
And the winning team is the Blue Team.
Whoo! I got the veal! I got the veal! I told you I had a good palate.
Good job.
Wendy, thank God you licked the [bleep.]
out of that veal steak.
You can lick the steak all day long, girl.
I knew it was veal.
I knew it.
I should have listened to my gut instinct.
I should have kept veal.
- Veal.
- Are you positive it's veal? - You think it's pork? - Yeah.
- That's definitely pork.
- Okay, we'll go pork.
You are a [bleep.]
[bleep.]
, Andrew.
Only one of you had the right answer.
Wendy, young lady, you have an extraordinary palate.
Thank you, Chef.
- Well done.
- Both: Thank you, Chef.
Today, all four of you are gonna soaring high above the Santa Monica Beach on a trapeze.
- What? - [bleep.]
.
- What? - No.
Are you serious? - Yes.
- Dude.
You'll be spinning at 30 feet in the air.
(Paulie) I'm excited for that trapeze.
I've heard only good things about it, and plus, we're going to Santa Monica.
Man, that's [bleep.]
gorgeous.
And one more thing.
Before you go up there, I want to tell you about tonight's service, 'cause this is a very special one.
We have closed Hell's Kitchen to the public, and there'll only be two tables of 12.
12 top for the Blue Team, and a 12 top for the Red Team.
Do not underestimate the importance of tonight's dinner.
- Is that clear? - All: Yes, Chef.
Okay.
Blue Team, head up.
Ladies, you two have a special treat waiting.
I'm still dying for one of these things.
- They're incredible.
- All: Thank you, Chef.
- Wow.
- Good job.
Red Team, today's punishment is not only tedious but it's back-breaking as well.
Instead of flipping through the air like the Blue Team, you're gonna be flipping over the entire dining room ahead of tonight's special service.
- Great.
- Yay.
Once that's completed, you're gonna be making stunning centerpieces.
- Yes, Chef.
- However, not using flowers.
We have boxes and boxes of delicious beets, and you're gonna carve stunning roses out of each one.
[bleep.]
.
(Andrew) I wouldn't mind eating a beet, but I did not come all the way out here to make beet flowers.
Once you've perfected those roses, then prep and set up both kitchens ahead of tonight's very important dinner.
- Yes, Chef.
- Yeah, Chef.
- Got it? - Yeah, Chef.
- Get started.
- Thank you, Chef.
Thank you, Chef.
- Oh, God.
- Oh, I'm so excited.
- Oh, boy.
- Oh, God.
- It's a big box.
- Open it, ladies.
- All right.
- It's puppies.
It's not puppies.
Ready? - Nice! - Ah! Look at how shiny and new it is.
Hey, guys.
Look what I got.
Oh, that's beautiful.
Oh, I love you, Vitamix.
You're so pretty.
- Let's go have a fun day.
- Are you taking it with you? - Yeah.
- Good idea.
- Damn it.
- Hello.
On a moving challenge with all females.
Can't lift 20 pounds.
Hey, listen: You're outnumbered so be quiet.
- I'm not scared of these women.
- Thank you.
I'm the big, strong guy.
I'm just gonna get the [bleep.]
done, ladies.
Come here.
Just give me that thing.
- Okay.
- Come on, let's get [bleep.]
.
Just go on a shopping spree or something and come back in an hour or so.
Heather, stop checking me out.
- Oh, yeah.
- "Oh, yeah.
" Strong like moose.
" I think Andrew has a little bit of an ego problem.
"Andrew's strong.
"He's a big guy.
I can't lift the chairs like he can.
" (Heather) Which makes him easy to manipulate.
You want to carry this over for me? Yeah.
I got the big six table myself.
Roll it.
Got to work smarter, not harder.
They're using you to work harder.
[laughter.]
Yeah, whatever.
Grab that bar for me.
Beautiful.
Don't move a muscle.
Stay right here.
Awesome.
Standing on the platform 30 feet up in the air.
A little nerve-racking if you're scared of heights, "but I'm thinking," Here we go.
It's ride or die.
" Pop, tiny hop.
Hang straight.
Legs up.
Oh, [bleep.]
.
I honestly didn't believe Chef Ramsay when he told us we were gonna go on a trapeze.
Up.
[laughing.]
That [bleep.]
was awesome, dude I'm ready to go again.
I thought that was a joke.
Hang straight.
Legs up.
Hook 'em on the bar.
There you go.
Legs down in front.
Very nice.
Whoo-hoo.
Hang straight.
Legs up.
Hook 'em on.
All the way.
Stick your arms up.
Tummy forward.
There we go.
I used to do backflips off the Coney Island pier, you know, like, when I was a kid.
I grew up in Brooklyn, so I was ready to go.
I'm okay.
My legs are shaking.
I'm climbing up this ladder.
My heart starts pounding and I'm kind of starting to [bleep.]
my pants.
I'm so nervous right now.
Oh, God.
Yeah, let's go, Wendy! I don't want to die! You're not gonna die.
There's a net.
Oh, God.
- Oh, God.
- There you go.
- No, I can't do it.
- Yes, you can.
Yes, you can, Wendy! - No, I can't.
- You got it.
(Devin) Go, go, go.
You got it.
You got it.
- There you go.
- Lean forward.
- I can't reach it.
Oh, my God.
- You got it.
Get your hands a little wider for me.
- Beautiful.
- Oh, my God.
No, please let me come down.
I can't do this! Don't let go of me! - All right.
- I can't do this! - Don't let go of me! - I won't let go of you.
Don't let go of me! Oh, my God! Oh, my God! Hold on, hold on, hold on, hold on, hold on.
Ahh! Please, for the love of God, I can't do this.
Oh, my God! Oh, my God! Oh, my God! Let's go, Wendy! - I don't want to die! - You're not gonna die.
There's a net.
I can't do this.
Don't let go of me! - I won't let go of you.
- Don't let go of me! The thing that I'm holding onto is trying to swing away from me.
I don't think I can do it.
I don't trust my arms.
I don't trust myself.
I can't do it.
I can't do it.
Yes, you can! I can't do it.
I can't do it.
That's okay.
I'm very upset that Wendy did not take the leap of faith with the team today.
Oh, believe in yourself.
My nine-year-old does this.
Let's hope she brings her game tonight because I'm gonna put her [bleep.]
ass up if she does not.
So pretty.
Yeah, this is actually fun.
I'm not having a horrible time.
It's [bleep.]
therapeutic.
I can't wait to do this at home for Christmas.
My Christmas table is gonna rock this year, and I'm gonna thank "Hell's Kitchen.
" Absolutely beautiful.
This is [bleep.]
.
It takes forever just to make one of these things.
This is awful.
I am done.
I hate it.
I hate it with a passion.
This is by far the worst punishment so far.
- No way.
- No.
Yes, it is.
I would rather pet a porcupine, touch a cactus, burn the inside of my mouth.
I would rather peel pine nuts.
(narrator) The Blue is back from their reward, and both kitchens are doing final prep for tonight's dinner service.
- How you feeling, Paulie? - Good.
Word up.
We can do this.
[dramatic music.]
This stuff can go in a dish.
Yes, ma'am.
Don't call me ma'am.
I'm not your grandmother.
Well, you look like her.
Red Team, line up, please.
All: Yes, Chef.
Blue Team, line up.
The dining room looks incredible.
- Thank you, Red Team.
- You're welcome, Chef.
Now, tonight we are hosting a private invitation-only dinner service honoring the major contributors to this amazing charity, Stand Up To Cancer.
Wow.
It's really important for me that we knock this out of the park.
Every woman in my family has either died from or gotten cancer.
The the thought of cancer scares the [bleep.]
out of me.
Tonight, each of you will be responsible for one course.
- Is that clear? - All: Yes, Chef.
Good.
Really show me that you can not only cook, but lead.
- Get on your stations.
- All: Yes, Chef.
Let's go.
Marino.
- Si, Chef? - Open Hell's Kitchen, please.
Let's go.
[dramatic music.]
(narrator) Tonight, Hell's Kitchen is closed to the public for this exclusive dinner honoring contributors to Stand Up To Cancer.
Cheers.
You guys do amazing work.
(narrator) These two dozen special guests will enjoy a four-course meal featuring lobster risotto led by Kimberly in the Red kitchen and Wendy in the Blue, pan-seared scallops overseen by Andrew and Devin, salmon with fingerling potatoes from Heidi and Paulie, and a 12-ounce New York strip with truffles spearheaded by Heather and Ryan.
Wendy, come here, please.
Kim, come here.
- Yes, Chef.
- Let's go.
First course: Lobster risotto.
6 1/2 to window.
Let's go.
12 risotto.
Both: Yes, Chef.
Ladies, we have 6 1/2 minutes.
Put the risottos to the window, please.
- You got it.
- Yep.
You got it.
The first course sets the entire tone for the rest, and I want this to go off without a hitch.
That one's perfect.
Don't over-soften that one, please.
Maybe a shot more of butternut puree in both until they match.
Well-spotted, Kimberly.
Thank you, Chef.
Perfect.
(narrator) While Kimberly pushes for perfection on the Red Team's risottos, over in the Blue kitchen So, who's cooking the risotto? - We are, Chef.
- We are, Chef.
I have Paulie and Ryan on risotto because I trust them.
(narrator) Wendy is running quality control on the Blue Team's appetizers.
Perfect.
(Ryan) Wendy wants me on risotto.
She didn't feel comfortable or confident making her food for her course.
She delegated it.
That's fine.
First two are perfect.
Ma'am.
Look, come here.
That one's lovely.
Smooth, glossy.
That one's still not ready, and that one's got a weird color in there.
It's the same [bleep.]
table, Wendy.
- Yes, Chef.
- It's a 12 top.
Different, different, nice.
[bleep.]
Ryan.
I put you over here to be the lead on the risottos.
There's one that's perfect and three that aren't.
They both need more puree.
- [bleep.]
now.
- More puree.
Yep.
Yes.
Yes.
It's got the wrong color.
(narrator) While Ryan quickly adjusts the problem risottos - Ladies, let's walk.
- Careful, they're hot.
(narrator) The Red Team, led by appetizer round leader Kimberly, is ready to plate.
- Coming in hot.
Swinging hot.
- Yep.
Go ahead.
Stop.
Stop.
That means S-T-O-P.
- Yes, Chef.
- When we serve Hey, Bozo! That's you as well.
Yeah.
I don't even serve that when we do two courses.
- Oh, I'm sorry, Chef.
- That's a portion.
- Elegant.
- Yes, Chef.
That's a mess, that's a mess, and that's a mess.
- Back into the pan.
- You got it, Chef.
Yeah? - Yes, Chef.
- And start again.
- Yes, Chef.
- Yes, Chef.
(narrator) While the Red works on their portion control, the Blue Team delivers their refired risottos to the pass.
Blue Team.
Let's go.
Up.
- How does it look? - Up.
- Up.
- Come on.
You happy with that, Wendy? - Yes, Chef.
- We were short a tail.
- That's all.
- Thank you.
Good, good, good.
Service, please.
Blue Team, let's go.
(Wendy) I'm super-stoked this is a good start for the Blue Team.
Go, Blue Team.
Whoo! Oh, it's so lovely.
Mmm.
2, 4, 6, 8, 10, 12.
Go.
Thank you, Chef.
- Wow.
- Lobster risotto.
- Beautiful.
- This is delicious.
- Wow.
- Mmm.
It's good.
It is good.
Andrew! - Yes, Chef.
- Devin.
Yes, Chef.
They're halfway through the risotto course.
- Yes, Chef.
- Pick up the scallops next.
- Six minutes to window, okay? - All right, Chef.
All right, so we're gonna start searing scallops now.
We got six minutes to the window on scallops.
- Heard.
- Heard.
Heidi can sear these scallops off.
I told Heidi she's gonna cook with me, and Kim's gonna set the plates up and put the black bean puree down, do the garnish, and then Heather's gonna help me plate when I bring the scallops up.
Don't go crazy on that second pan.
Let's just try to cook these - 12 at a time.
- Okay.
(narrator) While the Red Team pulls together to help deliver Andrew's course, over in the Blue kitchen Is anybody gonna help me with salmon? (narrator) Paulie is more focused on his salmon course than Devin's scallop course.
Scallops are now.
I cannot be worried about salmon right now.
All right, we'll help you.
We're gonna help you right when we're done with this.
I'm all on my own.
Thanks, guys.
Move it.
You got it move those salmon, guys.
Heard.
Heard.
- Move the salmons.
- I got six minutes.
What about my scallop dish before your salmon? Come on, dude.
- Three minutes left.
- Yep.
I'm dropping my scallops.
(narrator) While Devin tries to get Paulie in line - You want me to go? - Yep.
Go with these ones.
Take those ones are good to go.
(narrator) Andrew has a unique plan to get out the Red Team's second course.
And I'm gonna be right behind you with these 12.
Beautiful.
I'm searing scallops.
We get 24 pieces of scallops cooked off.
I was like, "Let's go to the window with that.
" No, everyone's plating, and you're searing off these last 12, right? 30 seconds, Andrew.
(narrator) While Heidi helps Andrew out on his scallops, back in the Blue kitchen Some of these aren't so great, Devin.
How are those extra scallops - looking? - I have six now.
(narrator) Devin is looking for backup on some subpar scallops.
- This one's broken.
- That's one broken? We can't take it.
How long? About a minute.
Devin, as soon as you get these done, will you start working that salmon? I will, buddy.
I promise you, I will.
Now they're cooked and getting cold, and Heidi's still not there.
(Andrew) I got three portions left and we're done.
Come on.
(narrator) Heidi delivers the last of the Red Team's scallops just as Devin brings up the last of the Blue Team's.
- Service, please.
- Thank you, guys.
- You happy with those? - Yes, Chef.
Go, go, go.
(narrator) And both tables receive their scallop course within seconds of each other.
- Very nice.
- Thank you.
Wendy, what's not in the potatoes? The capers, Chef.
(narrator) Will one chef go to extremes They walked away on me.
What do you mean they walked away? (narrator) To bury his teammates on charity night? I'll cut myself on purpose if I have to.
(Gordon) Medic! (narrator) Tonight, Hell's Kitchen is hosting a special four-course dinner for two dozen contributors to the charity Stand Up To Cancer.
I will say best scallop I've ever had.
Very good.
(narrator) Each kitchen is in charge of one table of 12.
(Gordon) Heidi, Paulie, fire the salmon.
(narrator) And Chef Ramsay has just fired the third course.
Let's go.
Six minutes to window.
Skin crispy, Heidi.
Hurry, guys.
Let's not be quiet.
We don't want to be quiet.
We want to talk it up.
(Gordon) Pick it up, Heidi.
Let's go.
I want to hear you.
Heidi.
Where did you go? I know you're a lot louder than this.
Where'd your voice go? Heidi, your course.
You own it.
- Let's go.
- You got it, Chef.
(narrator) Although Heidi is in charge of the salmon course for the Red kitchen, she seems to have lost her voice.
Meanwhile, in the Blue kitchen These guys are all perfect on the backside.
(narrator) Paulie is having no problems communicating his needs.
I need the garnish.
Paulie, these first sets of beans are good? - Two minutes.
- Paulie, take those beans.
Okay, I need more potatoes, please.
Here are more potatoes.
I'm pretty good with salmon.
I don't know how this is gonna go, but I'm pretty good at delegating.
I'm a head chef anyway, so shouldn't be too tough.
I want beautiful salmon, please.
Where do you want these salmon to go now? Underneath.
- Wendy.
- Yes, Chef? Come here.
What's not in the potatoes? The capers, Chef.
Unbelievable.
Who plated them? - I plated them, Chef.
- Oh, [bleep.]
.
Come on, Paulie, please.
- Wendy, please, please.
- I'm sorry.
You walked away with them before I was done.
What the [bleep.]
? He never should have plated the potatoes without the capers.
These are your dishes.
You run this course.
You are supposed to check it.
- Please.
- Here, take these ones here.
- They're perfect.
- Come on, please, Paulie.
- Come on.
- Come on, please.
[bleep.]
basic, guys.
You know the menu inside out.
I have Wendy cooking my food.
Wendy can't cook.
So, it's not hard to understand why things are [bleep.]
up because I don't have strong people cooking my [bleep.]
.
Hey, Blue Team.
Come here.
- No capers in the potatoes.
- Yes, Chef.
I'm sorry.
They they walked away on me.
What do you mean they walked away? Chef, I was garnishing and salting and seasoning You all know these garnishes inside out.
Yes, Chef.
I didn't have ultimate say over that.
I didn't put that on a plate.
Paulie did, and I never told him the potatoes were ready.
- Because they walked away.
- Yes, Chef.
(narrator) As the Blue tries to rally after the great caper caper All right.
You want to get 12 perfect ones together? 12 perfect.
(narrator) The Red chefs have pulled together and are plating Heidi's salmon course.
30 seconds.
Salmon's cooked beautiful.
Let's go.
- Beautifully cooked.
- Good job, guys.
- Thank you, Chef.
- Let's go.
- Good job, Heidi.
- Good job.
Hearing perfectly cooked salmon from Chef Ramsay makes me feel amazing.
I love to impress him.
- Whoa.
- How beautiful is that? This looks like it's cooked perfectly.
That is beautiful.
(narrator) All courses are supposed to be served to the two tables at the same time, but with the Blue lagging, the Red guests enjoyed their third course while the Blue table waits.
Things seem to be quiet back there and not anywhere close to being ready.
(narrator) And Paulie feels the pressure as he tries to finish plating.
Paulie, you want me to help you plate, - or can I start casting? - Yes, please help me plate.
What do you want me to do? Start glazing the salmon on top of the green beans.
All right.
Come on, guys.
Push, push, push.
Come on.
The Red table is eating, Blue Team.
Both: Yes, Chef.
I could never see Paulie leading any restaurant, let alone a fast-paced, high-volume restaurant in Las Vegas.
(Gordon) Why are we saucing now? - Are we finished? Are we ready? - We're finished.
- Yes, Chef.
- Go, please.
(narrator) With the salmon course finally being delivered to the Blue diners Wow.
The potatoes are amazing.
The potato is really good, yeah.
(narrator) The Blue Team must try to make up for lost time on their fourth and final course, which is being led by Ryan.
Kept asking for [bleep.]
help.
Paulie, we're moving on to my dish.
- Please help me.
- Yes, Chef.
(narrator) Meanwhile, back in the Red kitchen, Heather's steaks are already in the pan.
All right, guys.
We know what we're doing, right? Yes, we do, Heather.
Two slices on each.
- Trim that fat.
- All right, let's go.
Eight minutes to window.
Let's go.
All: Yes, Chef.
I'm on the New York strips tonight.
Hello.
Meat is my forte.
I got this one, Chef Ramsay.
Don't you worry.
(Andrew) You got this, girl.
30 more seconds on that one.
(Gordon) They're plating, Ryan.
Let's go.
Devin, get them up there.
I want you cutting and picking out - the best pieces, all right? - Heard that.
(Gordon) So, Ryan, you're seasoning the asparagus.
You're not saying anything, but he's standing staring.
- Devin is slicing - He's staring at the steaks! - Yes, Chef.
- Why is he not slicing? Start slicing, Dev.
Unbelievable.
Ahh! (narrator) Chef Ramsay closed Hell's Kitchen for a special Stand Up To Cancer charity event, and the teams are plating their final course.
Get that asparagus up here, guys.
(narrator) Ryan is in charge of the New York strips, and she needs Devin to start slicing.
He's staring at the steaks! Start slicing, Dev.
Unbelievable.
- Ahh! - Are you serious? - I just cut my [bleep.]
hand.
- Medic! Get a medic, please.
(Ryan) I don't want blood on my steaks, so get the [bleep.]
out of here.
I don't care if you want to be a baby about it.
Grow some balls, Devin.
Put that bad boy on there and we'll just kind of keep pressure for right now.
I felt the knife and I'm like, "Holy [bleep.]
.
" The knife just sliced right across the top.
[bleep.]
pissed, man.
[bleep.]
[bleep.]
[bleep.]
.
(narrator) While Devin attends to his fingertip, in the Red kitchen, Heather's looking out for her asparagus tips.
I got some asparagus tips going one way, one going another way.
Can you make sure all of them are facing the same way, guys? - Heard, Heather.
- Thank you, Heather.
Ready? - Yeah.
- Yes, Chef.
Are we ready? Last plate up.
Let's go.
- Last plate up.
- Thank you.
Pick it up, please, service.
(narrator) Once again, the Red beats the Blue Team to the pass - Good job.
- Guys, good job.
(narrator) As Heather's course is delivered to the VIP diners.
That looks beautiful.
(narrator) But Ryan's steaks aren't far behind.
(Gordon) Go, please.
I'm happy that everything ended up going out.
I'm happy that we didn't get kicked out of the kitchen.
I don't want Chef Ramsay to send anyone home on our team.
Thank you.
The truffle really makes the dish, in my opinion.
- Yeah.
- Oh, I love the truffles.
Clear down.
- How are we? - Thank you.
- Thank you.
- That was fantastic.
Magnificent.
- Your food is exquisite.
- Thank you.
Great work, all of you, and to think of what you've collected so far.
$300 million since the - $360 million.
- $360 million.
Amazing.
Here's to you.
- Pam, thank you.
- Thank you.
Thank you.
Okay, let me tell you something really important.
Our esteemed guests were very pleased with tonight's food.
Both kitchens had issues with efficiency and leadership.
However, there was one team who made a number of mental errors, and that team is the Blue Team.
You know it wasn't your best performance.
- Do you agree? - All: Yes, Chef.
Have a talk and decide on the two nominees who should be put up for elimination.
- All: Yes, Chef.
- Now, get out of here.
(Devin) You know, there's four of us and we got to nominate half our team.
I mean, this is difficult, but I'm gonna go with my heart and my gut and what I believe in, no matter who tells me what.
It's what I think.
Each one of us go around - and we talk about each person.
- You start.
Overall, Wendy, I think your leadership lacked.
You know, I'm not surprised you're coming at me.
I see the [bleep.]
because that's how you roll.
- You come at other people! - You're the weakest - in our kitchen.
- It doesn't matter! Who helps you the most during service? [bleep.]
me.
So you can throw me under the bus! - No stop it - You threw me under the bus.
You're the weakest in our kitchen.
Devin, stop yelling.
Devin, who are your two? Well, Wendy's definitely one of my choices.
And I hate to say it but I hate being frantic, and, Paulie, you made me frantic.
- You did, man.
- Are you kidding me? You did, 'cause as soon as we started you're like, "Devin", "as soon as the risotto's done, I want you searing salmon.
" I'm thinking, "Where are my scallops?" Paulie, you got to vote.
Paulie, come back so you can have your vote.
(Paulie) Go [bleep.]
yourselves.
And I want to tell you something, too.
Devin, you need to change your vote, because that [bleep.]
, she needs to go up there.
It's about a team.
She was working by herself, Devin.
All you did was cook your steak.
- Why didn't you sear - I was searing salmon.
- You didn't sear one! - Okay.
You didn't touch one of 'em.
She did, man.
I swear to you, she was over there.
All right.
Whatever.
Whatever.
She wasn't over there the entire time, - but she was over there.
- You're crazy.
You're all crazy.
There's no way on God's green creation I should be up there, but they're like, "Oh, you made us fran" What? The only reason why Ryan wants me gone is because she's scared of me.
The only reason why you guys would vote for me is because you know I'm stronger.
Why would I want to get rid of you? You're a solid cook, all right? But that you're frantic.
- So, who are you putting up? - I would go with you, - Paulie, yeah.
- And who else? I have to think about that one.
And who else? Put up one more person.
I just [bleep.]
said Are you deaf, too? This is how you act in the kitchen, too, and it's contagious.
I don't want to work with that.
- Shut the [bleep.]
up! - No.
- You can't - You're so weak.
You hide behind everybody else.
You've never taken Yes, you do.
Who am I hiding behind? You [bleep.]
took the whole kitchen over about salmon.
So I helped everyone, but I'm going up? It's your energy in the kitchen, - Paulie.
- Stop it.
I can say whatever the [bleep.]
I want.
Stop it.
Your energy, you're like, "Oh, I'm gonna" - "be the savior over here.
" - No.
But you're not.
All you're worried about is yourself.
- That's not true.
- You are lying.
You know what? Send yourself home, man.
[bleep.]
this [bleep.]
.
This is [bleep.]
.
I'm done.
Done.
Who are your two? You have not trusted in the team.
We told you what You don't trust yourself, Wendy.
(Wendy) You don't own up to mistakes.
I know where I made a mistake.
But you will never own a mistake.
- Never.
- I will, too.
- I didn't make any - You have not yet.
- It's not.
It's about today.
- It's Wendy and Ryan on mine.
Thank you guys for deliberating.
You're all pieces of [bleep.]
.
(narrator) After losing dinner service and being ordered to nominate two for elimination - This is gonna get ugly.
- Mm-hmm.
(narrator) The Blue must now name their nominees.
- Wendy.
- Yes, Chef.
Blue Team's first nominee and why.
Our first nominee is Paulie, Chef.
He got a little frantic.
He got a little flustered.
We were all trying to pull together as a team, and Paulie was more concerned about his course before the scallops even had gone out.
Second nominee, Wendy.
Unfortunately, our second nominee was me, Chef.
- You? - Yes, Chef.
I tried to fight, and unfortunately, I was outvoted.
Paulie, Wendy, step forward.
Paulie, welcome back.
I have no idea why I'm here, Chef.
You have no idea why you're here? I did more for my team tonight than anyone.
I helped cook and plate every person's dish.
They get mad at me when I'm pushing them to get their stuff done.
Miss Ryan didn't help anybody.
She had four people helping on her dish.
Ryan refused to help anybody? Yep.
Ryan didn't help anyone.
It's just not true, Chef.
I helped everybody on my team.
I was over there helping Paulie sear salmon.
That's not true, Chef.
But the minute we heard our station, it was like the "Paulie & Salmon Show.
" It took over our entire kitchen.
You know, I'm making excuses but I am helping every person cook and plate, but somehow, when I ask for help, it was not there, and because I kept asking for help, it got her flustered.
Wendy, why do you think you should stay in Hell's Kitchen? I know my mistakes, I fight back, and I try to fix them.
I did miss the color on the risotto and I own that.
And then the capers walked away.
It was not the capers that moved, Chef.
That's what you told me.
I was looking for the capers when the potatoes disappeared.
Oh, God.
So the potatoes disappeared? Yes, Chef.
They were walked to the pass before I said that they were ready.
So, somebody took them without you finishing them? - Yes, Chef.
- Where were you? I was looking for the capers, Chef.
This is hard.
My decision is [suspenseful music.]
Paulie.
Back in line.
Wendy, step forward.
Yes, Chef.
Young lady, you have an amazing palate.
You've proved that time and time again.
But, Wendy, I've waited and I've waited and I've waited, and it's not happening.
You are not ready to step into Yardbird as the head chef.
Thank you.
- Thank you, Chef.
- Good night.
- Have a good evening.
- Bye, Wendy.
- Bye, guys.
- Good luck.
- Bye, Wendy.
- Thank you.
I'm proud of myself for making it this far.
I struggled.
I tried.
I should have, you know, maybe portrayed more confidence from the beginning like everybody else, but I hate those chefs who think that they are the best [bleep.]
since sliced bread and suck.
A wise man thinks he's a fool and a fool thinks he knows everything, and that house is full of fools.
You're getting very close to earning a black jacket.
Every test from here on in, it is a chance for you all to prove that you are worthy of receiving one.
Get out of here.
(Paulie) There's no trust in the Blue Team, and rightfully so.
Everybody's out for themself.
I'm just gonna man my [bleep.]
and let them burn.
I'm not helping anybody ever again.
I'll figure out some way.
I'll cut myself on purpose if I have to.
The Blue Team, their morale is [bleep.]
.
Ryan and Paulie, they are two pit bulls going at it.
I just see Red Team picking off Blue like little blueberries.
(Ryan) I'm a little bit nervous about my team right now because I can't be going into service or even a challenge with a team that hates each other.
Devin's pissed at Paulie.
Paulie's pissed at me.
What kind of [bleep.]
high school drama is this? Can I go back to my Red Team now? (Gordon) First Wendy told me her capers took a walk, then it was the potatoes, but after watching her lack of consistency and confidence, I knew it was her turn to take a walk.
