Hell's Kitchen (2005) s16e13 Episode Script
lack Jacket Lounge
1 Previously on Hell's Kitchen In the Wheel of Fusion challenge, the chefs spun to combine ethnic cuisines.
- Mexican and chef's choice.
- Indian.
Nobody's ever done Mexican and Indian before.
The [bleep.]
, Drew.
And world-renowned fusion chef Roy Yamaguchi agreed The outside is brown, but there's rawness in the middle.
Rejecting both Andrew and Paulie's dishes.
I would probably stay away from giving anybody a point on this one.
Ryan's rack of lamb over French lentils That lamb's cooked perfectly.
Was the only dish to impress in the French and Japanese fusion round.
You've got that excitement between those two cuisines.
Thank you, Chef.
And in the final round, featuring French and Chinese cuisine I like the flavor of the sauce.
Kimberly's classic steak au poivre was well-received.
I would have to go with Kimberly.
- I would agree.
- She did it for the Red Team.
We're still in it.
But with the teams deadlocked in a tie, it all came down to the best dish of the day.
- I would go with Ryan.
- Blue Team wins.
Paulie's giving me a hug after we want to kill each other last night.
Now, he thinks we're best buddies.
At dinner service, Ryan threw away a perfectly good risotto Where's the risotto? Sorry.
I tossed it.
That's such a stupid mistake.
Much to Paulie's delight.
She's struggling, like I thought.
And Devin couldn't remember the orders Two sea bass, one veal, one New York strip.
One veal, one New York, t is it two? Oh, my God.
I'm not good at memorization.
Causing chaos in the Blue kitchen.
- Where's the bass? - It died waiting for the veal.
Listen, [bleep.]
face! How about you and him [bleep.]
talking? In the Red kitchen - Come on, Grandma.
- I'm sorry, Chef.
- You'll never [bleep.]
now.
- "Grandma"? Kimberly's slow cooking - Nicely cooked, the salmon.
- Thank you, Chef.
Didn't stop them from winning.
Blue Team, come up with the one person that should be eliminated.
- Ryan and Paulie - It's two against one.
He doesn't have a [bleep.]
chance here.
Let's just not beat a dead horse.
We know what's gonna happen.
Banded together and nominated Devin for elimination.
He was unable to remember checks.
Despite Devin's impassioned plea I'm a well-rounded.
I am very strong.
I have passion, and I should be in this competition.
Chef Ramsay took his jacket, ending his dream of becoming head chef at Yardbird Southern Table & Bar at The Venetian in Las Vegas.
And now, the continuation of Hell's Kitchen.
Listen carefully.
I am turning things up like you've never experienced before.
So, get ready.
Yes, Chef.
Get out of here.
I don't know what's gonna happen.
I'm not gonna speculate and get worried about it.
All I know is, I am going to fight tooth and nail.
[Bleep.]
me.
I'm glad you're still here, bro.
Come on.
- We're almost there.
- We're almost there, bro.
Me and Andrew have to stick together.
We're the only two dudes.
Those bitches are gonna try to push us out.
They'll bond together until we're out.
Are you circling my bald spot right now? No.
It's really balding? I mean, it depends how you [bleep.]
comb it.
- You're so needy.
- I know.
Andrew and Heather are lovers in love.
Ooh, mushy, mushy, gushy, gushy.
Ugh.
Love at first sight.
- Oh! - Hurry up! Scallops.
Where are they? - Oh! - Come on, guys, please! Get out! Where's the bass? Hey, hey, hey.
Come here, you.
Come here! It's just mistake after mistake after mistake! Whoo! It's just raw! Raw! Pathetic.
Line up.
Let's go.
Good morning.
Good morning, Chef.
Today, I will be awarding black jackets.
- Nice.
- Oh, yes.
And just to give you all a little bit of inspiration - Oh, my God.
- Oh.
That is my goal.
That is what I'm here for.
Watch out, bitches.
I'm out for blood.
You obviously know what you're playing for.
I just thought I'd remind you who you are playing for.
All the way from Ontario, New York, Kimberly, here's your daughter Apollonia - Oh, my God.
Oh, my God.
- And your boyfriend, Rodimus.
- Welcome.
- Oh, go get her.
Go.
Gorgeous little lady.
Hey.
I've missed my daughter more than words can say.
She's been my little lady.
I love her.
She's the big reason that I'm here.
Next, from Brooklyn, New York, Paulie, here is your mom Maria and your father, Paul, Sr.
What's up, pop? Oh, my gosh.
From Philadelphia, Pennsylvania, Andrew, here's your grandma Helen and your girlfriend, Leila.
Hi.
Oh, God.
Flying in from Grand Rapids, - Michigan - Oh, my God.
Ryan, here's your gorgeous daughter Sophie, - and your mom, Anne.
- Mama.
Oh, my God.
Oh, hi.
Oh, I'm gonna cry.
Coming in from Easton, Pennsylvania, Heather - Oh, my God.
- Here's your son Logan - Yes.
- And your mom, Terry, and your grandma, Donna.
- There she is.
- Baby.
Mommy! - Aww.
- Oh, my God.
It has to be probably the greatest feeling in the world right now.
I missed my little guy so much.
So, to get reassurance as to why I'm here, it means everything to me right now.
Heidi, straight from Auburn, Maine Here's your daughter Ariel and your husband Paul.
Me, too.
Enjoy your time with your loved ones.
I love you so much.
- I missed you guys.
- You're doing so good.
I'm so proud of you.
- Mommy's doing good, huh? - I'm so proud of you.
I'm trying.
Not that I'm not happy to see you guys, but I miss my girlfriend.
You come on an airplane all the way to California? - Yeah.
- Oh, my gosh.
TV.
Because I'm gonna get a really good job and then you can have whatever you want.
So, I guess they're keeping you busy, then? Oh, yeah.
It's nonstop.
I'm working hard for you guys.
It's hard.
Mommy's working so hard for you.
Mommy's gonna lose her mind.
- Airplane now.
Airplane now.
- I'm losing my mind.
I know.
This is the hardest thing I've ever done.
All right, families.
Unfortunately, - it's time to say good-bye.
- Ugh.
I love you.
Tell him what Mommy needs.
What does Mommy need? - Black jacket.
- A black jacket.
Okay.
I am doing all of this for my daughter, and to see her come through those doors, it's gonna give me that extra push.
I want to win.
Now, it's time to get back to business.
Yes, Chef.
I have designed three unique challenges.
There will be two winners in the first challenge, and both of those chefs will receive their black jackets.
There will be two winners in the second round, and both of them will receive their black jackets as well.
The remaining two chefs will battle it out in the final challenge competing for the last black jacket.
Is everybody ready for challenge number one? Yes, Chef.
Each of you will have 30 minutes to make your very own unique dish using ingredients from under these domes.
Under each dome are six different ingredients.
When I ring the bell, you will run to the first dome, grab one, - and start cooking.
- Oh, my God.
And then the bell will ring again, and you'll grab another ingredient from underneath the second dome.
You're gonna do the same for the third, fourth, and fifth domes.
- Clear? - Yes, Chef.
I don't care if I got to crawl through nails, manure, eat testicles.
Nothing is gonna get in my way.
I will be walking out of here with a black jacket, so help me, God.
One.
Two.
Three.
In the first of three black jacket challenges, the six chefs will be presented with five domes, each containing ingredients that they must use.
- Yeah, duck.
- Yeah, chicken.
I grabbed filet as soon as I saw it.
Jerk.
Each time the bell rings, they must grab one ingredient from the uncovered dome and combine them to make a dish worthy of a black jacket.
Second dome comes up and we are just out for blood.
Got to look.
Got to read.
Oh, not what I [bleep.]
wanted.
- What do you have? - Couscous.
- Yeah, couscous.
- I hate my life.
Thought I was grabbing polenta.
I didn't really look closely.
It was couscous.
Got to look.
Got to read.
Have to find some Get out of here! I'm not happy, but I'm gonna make it work.
Now, my dish is all over the place, and I feel I can adapt to any situation and cook my way out of it.
All right, let me start thinking.
Adapt.
I am ready to shine as a individual.
- Parsnips, sweet potatoes.
- And duck roast.
I want to show Chef Ramsay my determination, show him how great of a executive chef I am.
- Ahh! - Sorry, honey.
Kale.
Fennel.
Got to get out.
I just saw my mom and my daughter for the first time in so long.
I need to rock this.
- Who grabbed the mushrooms? - I did, Chef.
One more dome to go.
I want to win this challenge.
Knock it out of the park.
Have no worries.
You've got all the ingredients.
Think of everything, yes? Just under two minutes to go.
Let's go, guys.
Come on.
Seconds away from earning a black jacket.
Three.
Two.
One.
And serve.
Coming up The first black jacket belongs to Today, Chef Ramsay is conducting three challenges to determine which five of the six remaining chefs will receive a coveted black jacket.
He is now ready to judge the dishes made in the first challenge.
- Feeling confident? - Yes, Chef.
I'll be tasting each dish one at a time.
After I've tasted all six dishes, I then will reveal which two chefs have earned their black jacket.
Let's start off with Kimberly.
- Yes, Chef.
- Get it, Kim.
Get it, girl.
I never in a million years thought I would ever be at this point in the competition, you know.
I was always the underdog and I've been working really hard.
First up is Kimberly's Cajun sesame-encrusted tuna with basmati rice.
The tuna's seared evenly around the outside.
Here's the thing: A little bit too heavy on the Cajun seasoning.
- Yes, Chef.
- But overall that is a good dish.
Thank you.
Let's see how it fares against Paulie.
Please, let's go.
This challenge is super-high pressure.
This is, like, the playoffs, you know? Everybody here has a chance.
All you have to do is make it.
Paulie is presenting grilled lobster with potatoes and bacon lardons.
The lobster's cooked beautifully.
- It's got finesse.
I love that.
- Thank you, Chef.
- It just needs a touch of salt.
- Thank you, Chef.
- Thank you.
Really good job.
- Good job.
- Good job, Paulie.
- Good job, Paulie.
Next up: Heidi, please.
Now, the focus shifts to Heidi, who's hoping that her duck breast with sweet potato purée and parsnips will be good enough to earn a black jacket.
Not the perfect execution.
Better utilization of the parsnips.
- Okay.
- However, duck cooked to perfection.
Sliced, all the goodness is in the duck.
Good job.
- Thank you, Chef.
- Well done.
Good job.
Andrew, let's go.
Andrew has prepared a pan-seared spiced filet and couscous flavored with beet and orange.
Why couscous with filet? It was not what I was going for.
I thought it was polenta.
You boiled yours, which It cooks it too quickly, so it's soggy.
It's wet.
Just sort of turns it into a sort of heavy, bland mess.
But you've nailed the filet.
Tastes nice.
Beautiful presentation.
Just the garnish.
You know, it's a tough one to get right.
Good effort.
Thank you.
Next up: Ryan, please.
Ryan presents grilled hanger steak with quinoa.
I really wanted to do that quinoa on the bottom, but I had to get it on the plate.
Big plus on the protein.
Beautifully done.
But a minus on the garnish.
That is a letdown.
That's as bad as Andrew's couscous.
Thank you.
Heather.
- Yes, Chef? - Let's go.
Last to present in this first challenge is Heather with a French chicken breast with rice and broccoli.
- That looks stunning.
- Thank you, Chef.
The chicken's nailed.
The skin is intact.
The skin is crispy.
What would I do differently? Not much, to be totally honest.
- Great job.
Well done.
- Thank you, Chef.
- Thank you very much.
- There you go, Heather.
- Good job, girl.
- Good job, me.
This is tough.
Only two chefs will earn their black jackets in this round.
Oh, I'm gonna throw up.
It's so stressful to be just staring at our black jackets right behind Chef Ramsay.
The first chef, much-deserved.
Congratulations.
Well done, Heather.
- Great job.
- Thank you, Chef.
Good job, Heather.
This is amazing.
I'm in a [bleep.]
black jacket.
- Well done, my darling.
- Thank you.
- Good job.
- Thank you.
I am here to [bleep.]
win this thing.
Thank you, Chef.
Excellent.
Amazing.
I just joined the greatest elite club of Hell's Kitchen The black jackets.
The next black jacket belongs to Heidi.
- Yes.
- Good job, Heidi.
I earned my black jacket and I'm so excited.
Good job.
Amazing.
Welcome to the black jacket club, Heidi.
Very nice to see you.
One more thing I need to tell you both.
To mark this honor of joining that black jacket club, you'll now spend the rest of the day in the Black Jacket Lounge.
- Yes.
- What's a black jacket lounge? I'm hoping there's strippers.
I'm hoping there's stripper poles in the Black Jacket Lounge.
I'm hoping there's, like, karaoke or some funky stuff.
I've been living here deprived for weeks.
Oh, by the way: You need these to get in.
Oh, my gosh.
- Congratulations.
- This is so cool.
- Thank you, Chef.
- Congratulations.
Enjoy.
Well done, ladies.
Thank you, Chef.
Great job.
I can't go quick enough.
Oh, my God.
Yeah! It is awesome to be one of the first to get their black jacket.
To not have to go through any more rounds.
I'm so excited.
Oh, amazing.
Let's go check this [bleep.]
lounge out.
Oh, my God.
Oh, my God.
Oh, this is so cool.
Oh, look at all of our pictures.
- Wow.
- Oh, I'm getting a drink first.
There's an open bar.
We have darts.
We have bumper pool.
It is [bleep.]
incredible.
Of course I knew I was gonna be a black jacket, but to be the first one picked? Yeah! Victory.
In this challenge, two of you will get a black jacket.
The remaining two will have to battle it out in the final round.
Are you ready for your next challenge? - Yes, Chef.
- Bring in the locked cases.
It's always interesting to me to see four different chefs cook with the exact same ingredients.
Listen carefully: You must use all six ingredients.
How you use them, where you put them, what you get out of them, is up to you.
Think out of the box.
Are you ready to find out what those six ingredients are? - Yes, Chef.
- Right.
On your mark.
Get set.
Go.
Cauliflower, cherry tomatoes.
Shiitake mushrooms, white beans, baby eggplant.
And what's my protein? Salmon.
Winning this next round, getting that black jacket's gonna mean everything to me.
I don't want to go head-to-head in the final challenge.
- You comfortable with salmon? - Yes.
- Good.
You, Ryan? - Yeah, Chef.
- Good.
- This second challenge I do not want to [bleep.]
up.
I am on my game.
I'm not gonna let anything screw me up at this point.
All right, what are you gonna do? I'm gonna sear the salmon crispy.
Just salt and pepper.
Keep that really easy.
The eggplant, I don't know what the [bleep.]
I'm gonna do with.
I hate eggplant.
I never cook with it.
I literally haven't touched an eggplant in probably five years.
I feel like I have a plan with everything else but this eggplant.
20 minutes to go.
At this point in the competition, if we can't cook salmon, then you better get the [bleep.]
out.
But what am I gonna do with the eggplant? This could be my thorn in the side.
I throw it in the roast and hope for the best.
- Where's the salt? - Right where it always is.
Right there.
Given the fact that we all have the same ingredients, you're gonna have to be creative.
Ten minutes to go.
'Cause this really shows, like, people's personalities and your acumen in the kitchen.
I wonder what the next challenge was.
They're taking so long.
This is more anticipation than anything.
I know.
Ugh, [bleep.]
.
Five minutes to go.
Ugh.
My eggplant is burned.
I literally am saying, "Please, God.
I want that black jacket.
" Heather and Heidi are the first to receive their black jackets - Cheers.
- Yes.
and are now enjoying their time in the Black Jacket Lounge.
They now must wait to see who will be the next two chefs to join them.
Each of the four remaining chefs have all been given the same six ingredients.
They have only 30 minutes to create a unique and tasty dish.
Ugh, [bleep.]
.
Ugh.
My eggplant is burned.
I'm just praying for a miracle.
- Five minutes to go.
- Yes, Chef.
What the [bleep.]
to do with this eggplant? I chop off the crispy edges on my eggplant.
Throw in the eggplant in there just to add it.
I throw it in my purée and I start blending the white bean, the cauliflower, and the eggplant.
I'm making a triple purée.
I'm gonna triple threat Chef Ramsay.
60 seconds to go.
Ten.
Nine.
Eight.
Seven.
Six.
Five.
Four.
Three.
Two.
One.
And stop.
Well done.
Okay, let's start off with Kimberly.
Let's go.
Yes, Chef.
Describe the dish, please.
It is a pan-seared and roasted crispy skin-up salmon in a roasted eggplant, white bean, - and cauliflower purée.
- Skin: Crisp.
Thank you, Chef.
Beautifully done.
What am I expecting in the center? I'm hoping perfection, Chef.
It's almost pink.
- Damn it.
- Beautifully cooked.
- Beautifully cooked.
- Thank you, Chef.
Weird texture on the purées.
I wanted to actually do the eggplant separate for you, but then when I realized I was kind of [bleep.]
with the eggplant, I took a chance and a risk and I threw the eggplant in with my purée.
Well, that's one way to do it.
Just put the whole [bleep.]
dish in a blender and make him baby food.
The three don't really blend as well as they sound.
Okay.
Okay.
But the salmon is cooked beautifully.
- Thank you, Chef.
- Thank you.
- Good job, Kim.
- Next up: Ryan.
Let's go.
I have a seared salmon, crispy skin.
I roasted the eggplant and the mushrooms separately.
Mixed that with the white beans with some garlic and shallot also.
It looks fantastic.
- The salmon is beautiful.
- Thank you, Chef.
- The purée's delicious.
- Thank you, Chef.
The eggplant, a little bit soggy there.
- Okay.
- Apart from that, simply a flawless dish.
- Thank you, Chef.
- Thank you.
- The salmon's perfect.
- Thank you, Chef.
- Good job.
- Good job, Ryan.
Andrew, let's go.
Tiny details keeping people out of black jackets right now, but I think my dish is strong.
My salmon is perfect and I got a nice, beautiful piece of roasted eggplant.
It looks elegant.
Lovely colors.
Definitely medium rare.
Eggplant.
This is a big issue here for me.
How bitter was that? It was bitter.
It finishes very bitter.
It's almost like that's come from a different chef.
I should have just not did what I did with it.
Thank you.
Eggplant.
Yeah, I mean, I feel like I'm still in the runnings.
Kim didn't have a perfect dish.
Ryan didn't have a perfect dish.
But my dish just did bad and I'm nervous now.
- Paulie, let's go.
- Oh, I'm so pissed at myself.
I have a pan-seared salmon with a white bean purée, oven-roasted cauliflower.
- That looks amazing.
Beautiful.
- Thank you, Chef.
Glistening.
Mushrooms, how'd you cook them? I just flashed those very quickly with a little bit of vegetable stock.
Don't like the crunch of the mushrooms.
Mushrooms need a bit more.
Eggplant.
I think my eggplant's dynamite, but then again, Chef Ramsay always tries to pick apart everything I do.
He told me to stop breathing one time because he didn't like it when my mouth was open.
So, who knows what he's gonna think.
Mmm.
Wow.
They're delicious.
Whoo! Ric Flair, baby.
- Thank you, Chef.
- Good job, Paulie.
- There's your eggplant, dude.
- Good job, Paulie.
Who do you think's gonna go home? I think with the challenge we just did, either Paulie or Kim.
Mm-hmm.
All four of you nailed the salmon beautifully.
Well done.
- Thank you, Chef.
- Thanks, Chef.
But I am digging into detail beyond belief.
That's how close this is.
The next chef to receive their black jacket and join Heather and Heidi in the Black Jacket Lounge is Ryan.
Thank you, Chef.
Thank you.
- Well done.
- [Bleep.]
.
A massive upgrade from round one to round two.
Yes, Chef.
I feel amazing to be in a black jacket.
That's what my goal was.
But I'm proud of myself.
I'm happy that I got it together after seeing my baby and my mommy.
Get up.
Get up.
Ahh! Oh, my God.
Heidi.
Oh, my God.
Oh, my God.
Oh, my God.
Oh, my God.
I'm just freaking out.
I can't believe it's Ryan.
I am so excited.
She's my girl and I want her there right next to me and enjoying this Black Jacket Lounge with me.
Anybody else get good feedback besides you? Yeah.
Andrew screwed it up again.
- Wow.
- It's between Paulie and Kim.
I don't think.
I would be surprised if Andrew - came through.
- Wow.
I have one more jacket to give out for this round.
And that black jacket is going to It's the second round of Chef Ramsay's three part Black Jacket Challenge.
- Ahh! - Oh, my God.
Heidi.
Ryan has just joined Heather and Heidi in the Black Jacket Lounge.
Now, either Andrew, Kimberly, or Paulie will receive their black jacket, leaving the last two to cook for their life in the final round.
I have one more jacket to give out for this round.
That black jacket is going to Paulie.
Good job.
You are now part of a very elite brigade.
- Well done.
- Thank you, Chef.
- Great job.
- Thank you very much, Chef.
- Well done.
- When I walked in here, I definitely saw myself in a black jacket.
That's why I'm in a black jacket.
You know, you got to visualize what you want.
- Ahh! - I got a jacket! - Yes! Yes! Yes! - I knew it.
It feels good wearing a black jacket, you know? Dude, I can't believe it.
Yeah, Paulie.
Yeah.
Paulie walks through the door.
Whatever.
I'll take it.
Paulie will be easy to beat.
Beer tastes so [bleep.]
good right now.
- I'm gonna get drunk.
- Yeah.
Yeah.
Andrew has to be so pissed off right now.
One more.
I love you guys.
As this is your last chance to earn a black jacket, I've decided to give you complete freedom.
I've arranged for a farmer's market just outside.
You'll both have three minutes to shop for your ingredients for your defining dish.
I want you to make two portions of the exact same dish.
You'll then have 30 minutes to cook those two portions.
You got to be smart with everything you put on that plate.
If I can't beat Kim, then I don't deserve to be here.
Three minutes to shop, 30 minutes to cook.
- Are you ready? - Both: Yes, Chef.
Head outside, 'cause your three minutes starts now.
- Let's go.
- [indistinct.]
no? Hold on.
Oh, my God.
Okay.
- Welcome to the farmer's market.
- How are you? Let me know if you have any questions.
- Thanks.
- Thanks.
Hanger steak.
I see some beautiful filets, and I'm like, "Bam.
" Filet.
Just in case, a filet.
I actually grabbed three, in case I [bleep.]
up one.
Use your time wisely.
Take whatever you want.
I already had in my mind what I was doing.
Filet.
I really would love filet.
I know I'm gonna do a wild mushroom bordelaise, Brussels sprouts, fingerlings, lemon zest.
- It's gonna be good.
- Coming up to halfway, guys.
Just in case, a mango.
Andrew and I have bumped heads a lot in the past.
Do you think you're gonna be here longer than him? - It's my mission.
- Guess what? Mission unsuccessful.
You're not invisible to people.
You don't have to always be so loud.
Here we go.
I don't like a girl that's stuck up and thinks she's better than other people.
I don't want to wish negative upon anybody, but I fully believe in karma.
What goes around, comes around.
Andrew made his bed and now he's got to lay in it.
That's crab meat.
15 seconds left.
Eight.
Seven.
Six.
Five.
Four.
Three.
Two.
One.
Let's go.
I want to make it to the grand finale.
I am focused.
I am determined, and I want this more than anyone.
30 minutes, guys.
Good luck.
Let's go.
It comes down to this one last dish.
Kim, I'm sorry, but it's time for you to go home, hon.
I'm gonna pan-sear filets with a demi-glace with the wild mushrooms.
The pressure is on, and it's not gonna be coming off until I have that black jacket.
I'm more ready.
I really hope that Drew pulls this out.
- I do, too.
- I think it's gonna be close.
He's pissed.
Mm-hmm.
Okay.
Just under 15 minutes to go.
I'm gonna do a nice little purée on the bottom with the potatoes.
Lay my steak on top acrossed it.
Flow the sauce over top.
No problem.
Mmm.
It's gummy.
Andrew is getting a little flustered.
He looks absolutely miserable, and he is so nervous.
[bleep.]
.
I'm done with that.
Sorry, Andrew.
What'd you say? I'm debating whether I want to use that or not now that I've tasted it again.
I got an idea.
What if I make it into something different? Listen, I want black jacket.
I am going to taste, retaste, reseason, season again, taste again every single component of this dish.
Mmm.
I just need everything to be spot-on, and here we go.
Think finesse.
Finesse, finesse, finesse.
Okay.
Time to start plating.
I want some goat cheese under there.
60 seconds to go.
30 seconds to go.
20 seconds to go.
Ten.
Nine.
Eight.
Seven.
Six.
Five.
Four.
Three.
Two.
One.
And serve.
Wow.
That was a fast 30 minutes.
Well done.
Let's start off with Andrew.
Yes, Chef.
It comes down to this one last dish between me and Kim.
I think I'm a better chef than Kimmy.
I definitely deserve winning this competition, black jackets and everything that it entails.
Now, describe your dish, please.
It's a pan-seared New York strip with a wild mushroom and crab bordelaise.
And yeah, it's perfect.
Roasted Brussels sprouts with brown butter, bacon, and lemon zest, and a potato purée with goat cheese, chive, and roasted garlic.
Have a taste of that.
- I think they're good, Chef.
- Yeah, I agree.
Absolutely phenomenal.
I mean, some of the best-tasting sprouts I've ever tasted.
Thank you, Chef.
New York strip.
Nailed.
I thought the crab was gonna be lost, but the sauce isn't too heavy.
Purée slightly gloopy.
- Yes, Chef.
- What do I change? I would never have blitzed the purée.
- Uh-huh.
- Apart from that, - it's a very strong effort.
- Thank you, Chef.
Thank you for everything so far.
I appreciate it.
- Well done.
Well done.
- Thank you.
- Thank you.
- The Brussels sprouts are good.
The steak's cooked perfectly, and he likes the sauce.
My food was great, so I'm super-excited.
- Kimberly, let's go.
- Yes, Chef.
Even though Andrew did well, I put my heart and soul and everything in that dish.
I know in my heart this is a black jacket dish and I am [bleep.]
proud of what I just put up there.
Kimberly, describe the dish, please.
It is a pan-seared butter-basted filet.
The filet's nailed beautifully.
Thank you, Chef.
With a mixture of trumpet mushroom, shiitake, and button, in a red wine demi-glace with a parsnip purée and oven-roasted asparagus with a little bit of olive oil, salt, and pepper.
The filet's stunning.
Beautiful.
- Thank you, Chef.
- The mushrooms, delicious.
Sauce, I thought I was gonna be too rich and dark and cloy, - but it's not.
- Thank you, Chef.
Purée's delicious.
Asparagus just a little bit bland.
Asparagus is a letdown.
- Sorry, Chef.
- Thank you.
You're welcome.
I've just executed probably the best dish of my life here in Hell's Kitchen.
Please don't let asparagus take me out when I have a perfect purée and a gorgeous piece of meat.
Andrew and Kimberly, this is a very difficult decision.
We know.
You both have put forward great efforts, let me tell you.
Sorry, Kim.
I feel bad seeing you go, but I'm gonna win this one.
The final person to receive their black jacket is not gonna be decided by me.
What? Seriously? Oh, Chef! Why you do this to me? For the first time ever in Hell's Kitchen, Chef Ramsay devised a three part challenge to determine which five of the six remaining chefs is deserving of a black jacket.
Black jackets! Heather, Heidi, Ryan, and Paulie have already received theirs and are anxiously awaiting to see if it will be Kimberly or Andrew who walks through the door of the newly created Black Jacket Lounge.
The final person to receive their black jacket is not gonna be decided by me.
Oh, my God.
I thought it was over and I was gonna get a black jacket.
The winner will be decided by your four peers.
[bleep.]
.
Everybody hates me.
Everyone loves Andrew.
Like, he's involved in a love affair with one of the judges.
How the [bleep.]
are they ever gonna pick me fairly? Now, because your dish will determine if you advance or go home, I do not want them knowing who made what dish.
If it's a tie, I'll break the tie.
Head up to my office.
Chef Andi will take care of you.
Thanks, Chef.
I'm gonna pay a visit to the Black Jacket Lounge.
Yes, Chef.
Meanwhile, in the Black Jacket Lounge.
Can I have another beer, please? Oh, my God.
- Here we go.
- Oh, God.
We hear somebody at the door.
Everybody's standing in anticipation.
We're all thinking it's gonna be Andrew.
We're all hoping it's gonna be Andrew.
Wow.
I know you're expecting to see either Andrew or Kimberly.
But I have something else that I need to do.
Okay.
- Heather.
- Yeah, Chef? - I need you to come with me.
- Okay.
Let's go.
The rest of you stay here.
- Bye, guys.
- Cocktails, please.
Let's go.
Thank you.
What are we doing? Does she have to help him? Right.
Heather, listen carefully: I will not be deciding who will be receiving the final black jacket.
You will, along with your fellow black jacket recipients.
Oh, wow.
That's exciting.
Here in front of me are two stunning dishes.
You'll taste both dishes and you will tell me which dish you like the best.
You got it, Chef.
I want somebody on my black jacket team who knows what they're doing.
Andrew's the better chef, so all I have to do is figure out who plated what.
In front of you here, filet mignon, wild asparagus.
It's served with a parsnip purée and sumac.
How's that cooked for you? - Perfect, actually.
- Next one.
You have a New York strip.
Bled out a little bit.
Has a red wine demi, and is finished with crab.
Underneath that is a goat's cheese and puréed potatoes with chives.
Not as much flavor as that steak.
If you had to choose between the filet mignon or the New York strip, which one would it be? I would have to pick the filet, Chef.
- Thank you.
- All right.
Thanks, Chef.
Great job.
We did such a good job.
I don't want either one of us to go home right now.
Welcome.
Step on up.
Now, it's up to Heidi, Ryan, and Paulie to taste each of the dishes and determine which is better.
They have no idea who made which dish.
Okay.
So, there we are.
First up is Kimberly's filet mignon.
Filet's cooked perfect.
The mushrooms are nice.
That sauce is nice.
I like the sumac in that purée.
I really like this filet though.
Good.
Now, this one.
Now, the newly christened black jackets will taste Andrew's New York strip.
I think this tastes great.
The flavor's great.
The steak is cooked how I would want it.
You've tasted both purées.
I like the goat cheese.
- Mm-hmm.
- That's different.
I like the mushroom and the purée together.
Kim, I can't stand her.
I just want my boy Andrew with me and I want Kim gone.
I'm proud of both of us regardless.
Dude, both of those dishes look restaurant-ready.
Good.
Okay, we're about to find out who's joining you.
Andi, could you please get Andrew and Kimberly, please? Thank you.
Guys, come down and line up.
- Welcome back.
- Thank you, Chef.
Please, both of you just stand over there.
- Good job, guys.
- Good.
Don't cry.
- You don't cry.
- You don't cry.
- I promise.
- All right.
Andrew, Kimberly, your peers have tasted both dishes.
The chef who received the most votes gets the final black jacket.
They did not know who cooked which dish.
They don't even know how each other have voted.
Really? So, you're all gonna find out at the exact same time.
- Oh, my God.
- Good luck to you both.
Thanks, Chef.
Thank you, Chef.
Black jackets.
Yes, Chef? A little piece of information: Kimberly cooked the filet.
Andrew cooked the New York strip.
- Heather.
- Yes, Chef? Which dish did you prefer? Kimberly's filet or Andrew's New York strip? It was Kimberly's filet, Chef.
She says Kim.
What the [bleep.]
? Heidi, which dish did you prefer? Andrew's strip.
- Ryan.
- Yes, Chef? Which dish did you prefer? I chose Andrew's strip, Chef.
See? It's okay.
Two of Andrew, one for Kimberly.
- Oh, God.
- One more vote, Andrew, and you win it.
Paulie, did you prefer Kimberly's filet or Andrew's New York strip? In the final round of today's black jacket challenge, Chef Ramsay has left the decision up to the four chefs who have already earned theirs.
The score is currently two for Andrew's New York strip, and one for Kimberly's filet mignon.
One more vote, Andrew, and you win it.
Paulie, did you prefer Kimberly's filet or Andrew's New York strip? Paulie, you know my menu.
You know how I cook.
Three votes gets me a black jacket.
Paulie, give me your [bleep.]
vote, please.
It was the filet, Chef.
Oh, boy.
Oh.
I will never hang out with you.
Thank you, guys.
I give you the vote, you give it back to me.
- Yeah, Chef.
- Sorry, Chef.
That's how close this was.
Kimberly and Andrew, there was one dish that had the edge.
The chef receiving the final black jacket I have pushed through every challenge, every contest, every service.
If I lose right now, it would have just been all that for nothing.
I've grown the most out of anybody in this entire competition.
More than anyone else, I do deserve a black jacket.
Congratulations Kimberly.
- Oh, my God.
- It's fine.
It's fine.
Good job, guys.
Kimberly, come and get your black jacket.
- Well done.
- Thank you.
- Good job.
- Oh, thank you, Chef.
- Amazing.
- Thank you.
I can't believe I made it! I'm so excited.
I can't lie, it feels awesome.
I made it.
[Bleep.]
yeah.
Andrew, you know why you lost this final challenge.
Yep.
You just under-delivered with that purée.
Yep.
I know that you have got a very promising career in front of you.
Well done, young man.
Give me your jacket.
Your time is done in Hell's Kitchen.
Chef, thank you so much for everything.
- Well done.
- Good job, Andrew.
- See you later, Drew.
- Thanks, Andrew.
- Bye, Andrew.
- Good luck, guys.
Thank you.
Ay yai yai.
That's tough.
I am extremely shocked that I'm out here.
I'm pissed at myself.
You know, I'm disappointed in myself.
I thought I'd at least be in the finale, God forbid, let alone a black jacket.
I really let myself down.
I feel I kind of let my son down and everyone back home.
So, it's a rough feeling right now.
Now that you have your black jackets, I want you to honor it.
Yes, Chef.
Prove you're worthy of it.
Yes, Chef.
Get out of here.
Well done.
Thank you, Chef.
- Good job.
- Thank you, Chef.
I've come from nothing and I've worked my way up.
It's like being a poor person and ending up as a CEO.
It's the greatest reward ever.
- I'm proud of you.
- Thanks.
I care about Andrew.
I'd like to see him in a black coat with me, but at the end of the day, the filet mignon compared to the New York strip, it won hands down.
- Paulie.
- Yeah, Chef? Last man standing.
All right, Chef.
He just walked into the oven.
I [bleep.]
hate Kim.
Andrew deserves to be here way more than her, but it's not his fault he's not here.
If I would have just said the strip instead of the filet, he would still be here.
Andrew had three chances to save his life in Hell's Kitchen.
Like they say: three strikes and you're out.
Next time on Hell's Kitchen Take a little look at your shoulder.
[Bleep.]
idiot.
Black jacket.
When the black jackets come on I need some space.
Get the [bleep.]
out of my way.
- The claws come out.
- She [bleep.]
up.
She [bleep.]
up.
You [bleep.]
up.
If I could punch him in the [bleep.]
throat, I would.
You [bleep.]
up the most.
I hate that [bleep.]
bitch.
Will the backstabbing be too much for Kimberly? Look at me.
Do you want to go home? - I don't know, Chef.
- Oh, my God.
Next time on a cutthroat Don't come back in the kitchen! - What the [bleep.]
? - And crushing Get the [bleep.]
out of here! Episode of "Hell's Kitchen.
"
"
